A Red White and Blue 'Zebra' Cake

I used my Vinegar Cake Recipe to make a Red-White & Blue Three Layer Zebra Cake for the 4th of July Party (Scout requested the three layer cake) -

Vinegar Cake
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
1/4 cup oil
1 cup cold water
1/2 teaspoon vanilla
Mix all of the above ingredients then add:
2 teaspoons vinegar - stir in quickly

Makes 1 9" round pan - Bake at 350 until cake test done.

So for this cake I made three...


I left one batch white - tinted one red - and one blue - then spooned the different colors in concentric rings into each of the three layer cake pans...

...allow to cool on a wire rack...

...frost with a simple buttercream frosting...

Buttercream Frosting Recipe

1/2 cup solid vegetable shortening
1/2 cup Earth Balance margarine
1 teaspoon vanilla extract
4 cups sifted confectioner's sugar (approximately 1 pound)
2 tablespoons soy milk

Cream the Earth Balance and shortening with an electric mixer. Add vanilla. Gradually add the sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all the sugar has been mixed in, the icing will appear dry. add soy milk and beat at medium speed until light and fluffy. (Yields 3 cups). Store icing in the refrigerator when not in use. Rewhip before using.


...so good and so much fun - Scout's right - a three layer cake is just more special...

  3. yes, that is too cool! you could do something similar for Christmas with red/green....and maybe pastels for Easter, orange/black for Halloween....please, stop me!!
