Strawberry Muffin Cake
...With all the fresh strawberries about...
.........and being somewhat lazy...
............and wanting to use my pretty cake pan...
...............I mixed up some muffin batter...
..................added some strawberries...
...and we had a warm 'Muffin Cake' for breakfast...
Strawberry Muffin Cake
The original recipe is from an old Betty Crocker Cookbook (easily veganized)
3/4 cup milk - I used soy milk
1/2 cup oil - I used applesauce instead - your pick
1 egg equivalent - I used flaxseed goo
2 cups all purpose flour - I used 1 cup AP and 1 cup Whole Wheat - you could probably use all whole wheat - but I've never tried it - it might be a bit heavy.
1/3 cup sugar
3 teaspoon baking powder
1 teaspoon salt
1 cup fresh strawberries
...Super easy - and warm and slathered with some Earth Balance - this was just the right start to our day...
