...Vegan Hot Cross Buns...

...while we were visitng family for Easter we did some Easter Baking...

...I had been wanting to make Hot Cross Buns...but needed to use ingredients that were on hand...so I just adapted several recipes into one...I've listed my ingedients below...

...and here's the technique...
...first I warmed the almond milk and added the sugar, cinnamon, and yeast...
...stirred that up...and added the melted Earth Balance...
...then stirred in the flour...
...until I had a sticky dough...turned that out and kneaded it a bit...
...put it back in the bowl to rise...
...in about an hour it had doubled...
...so I punched it down...
...added the raisins...
...divided it into 8 rolls...
...snipped the tops...first one way...
...and then the other...to form a cross...
...let them rise again...about 20 minutes...the cross will open up a little bit as it rises...
...bake until golden brown...
...mix up a glaze...about 1/2 cup of powdered sugar and a tablespoon of almond milk...
...then drizzle the glaze into the cross indentations...
...a little might drip down onto the pan...but fill in the indentation pretty well...

  2. The hot cross ins I remember from childhood were currant buns with a cross made from white bread dough on the top. Now they are much more exotic with more spices in them but I have to say I buy mine!
