...falcons...and rainbows...

...right here at the very end of August...the end of summer really...we are having some of the hottest (and muggiest) weather we've had all summer...

...truth be told though...this has been a very mild summer...and the weather man said last night that tomorrow will be our only day above ninety (90° F/32°) this month...which is probably really unusual around here for August...
...but, from the deck, we saw a falcon panting in the shade...
...and the afternoon thunderstorms have spawned some pretty heat lightening and rainbows...

...Thrifty Thursday...

..another productive trip to the Thrift Store...of course we were dropping off (way more than we picked up)...so that's alright isn't it...
...I had been wanting a set of these stemless wine glasses for a while...and we had one already...
...and I just happened to find 3 more...to complete the set...how lucky is that...

...also that's my new favorite wine in the background...organic and no nitrites...

...Scout's Scout Update...

...Scout got the first approvals for his Eagle Scout Project at last night's meeting...he still has two more signatures and then I'll share his project idea with you...

...Bathroom Ceiling...Final Update...

...we had a really busy weekend...but we did manage to get the final coat of paint on the bathroom ceiling...

...so that's all finished...(kinda difficult to photograph though)...it's just smooth and white...and we did only do three coats...

...now on to the walls...a skim coat (or 2 or 3) over the entire surface...to repair the damage done by removing the wallpaper...ARGHHH!...

...Bryanna's Buttery Spread...

...One of the best things I've made with my new Vitamix Blender is BRYANNA'S COCONUT-CORN SPREAD...
...I printed the recipe and gathered my ingredients...nothing exotic at all...
...agar...corn meal and water...microwaved...
...then everything in the blender...
...blend on high...this is where the Vitamix is best...as it blends everything perfectly smooth...
...then just pour it into a covered glass bowl...
...and refrigerate until cool...
...it certainly looks like butter...
...a little bit firm...but spreadable...
...spread on toast...
...it was perfectly delicious...
...we tried it on some carrots for supper too...

...it was really, really good!...

...who would've though that you could take ordinary ingredients like coconut, and cornmeal and make a delicious spread like this...

...just another quick-easy-delicious-vegan breakfast...

...file this under the heading...so easy...and so good...
...make some whole wheat toast...and slice an avocado in half...
...scoop out the avocado and smush/spread it on the toast...
...sprinkle with some coarse salt and black pepper...and enjoy...

...such a good wholesome and easy breakfast...

...Radish Top Soup...

...when you buy a nice bunch of organic radishes...do you use the radish tops or just cut them off and toss them?...
...they're so pretty that it seems a shame not to use them...
...they're really dirty...
...so let's wash them first...three times is about right...
...then make a broth...I just used some of my powdered vegan beef broth...from the SDA store in NC...
...add some fresh mushrooms...
...and then the pretty greens...
...it makes a delicious soup...and reminded me a lot of beet tops...not as spicy as I would have thought...

...well...after this experiment turned out so well...I'll never toss those radish tops again...I think they'd be really good just sauteed in some Earth Balance too...

green bathroom ceiling update

...the last time you saw the ceiling it looked like this...

...that was when we replaced the ceiling fan...

...but we decided to just replace the entire ceiling...instead of patching it...
...we used a combination of construction glue and screws...
...we made a cleat and just screwed the new drywall up right over the old...
...I say we...but this was mostly the Man and Scout doing this part...
...I'm the measurer and cutter in this outfit...
...and of course the spackler as well...

...and this is after one coat of spackling...

...my first Artisan Vegan Cheese...

...this also counts for W.I.P. Wednesday...I think...

...so of course I used my new rejuvelac to make some cheese...

...and I chose the air dried cheddar to start...
...first you blend everything up...
...and then you let it sit out on the counter until it becomes pungent...and develops however much 'sharpness' you desire...
...then you cook it...
...with some agar and tapioca flour...
...until very thick...
...put it in an oiled non-reactive bowl...
...and refrigerate until cool...
...then run a knife around the edge...
...and invert the disk of cheese...
...with wet hands...
...rub some salt all over the outside of the cheese...
...then leave it on a cake rack on the counter to air dry...
...it may crack...that's ok...
...after a few days drying you're ready to try your cheese...
...we had ours sliced on some crackers...

...this is so good...you've got to make some...
