I have been using (and LOVING) my new Vitamix blender...so when I saw this Vegan Eggplant Nacho Dip I knew I had to make it...it is cashew, soy, dairy, and gluten-free and only 55 calories of creamy goodness...
...start by slicing and salting your eggplant...let it sit a while...
...then put it on some parchment...
...and roast it until nice and golden...
...then wrap it in foil...
...and let it steam...
...peel it...quite easily...
...it will be almost a cup...
...blend until smooth...with the other ingredients...
...then cook it until thick...
...pour in some salsa...
...stir...
...and enjoy...
