...we woke up to a different world this morning...one without my Grandma...
...my 102 year old Grandma passed away this morning...

...W.I.A.Y...Eat Your Greens...

...Participating in Eat Your Greens - June 2018...

...I started the day before dawn with cereal and almond milk with Scout...he leaves the house about 6:30 to go to the gym before his summer intern job...
...and I've gotten to the bottom of the delicious dried fruit that my sweet sissie sent me for Christmas...and there was a handful of dried kiwifruit left...not our fave for eating out of hand...
...added some vegan protein powder...not my favorite...but I'm definitely going to use it up...and some Spirulina...
...and some spinach stems...from the spinach I was preparing for lunch...
...and blended that all up into a nice green (protein rich) green smoothie...it made 2 glassfuls...so I had one mid morning and another one with my lunch...
...so I just water-sautéed the spinach with some garlic...that whole big pan only makes 2 nice sized servings of spinach...
...added some leftover squash casserole, leftover green beans, carrots and cucumbers along with the second glass of green smoothie...
...later in the afternoon...I had a snack of chips and salsa with nooch...
...just bottled salsa mixed with nutritional yeast...so good...
...and before dinner...I had a couple of handfuls of grapes and cherries...I'll be sorry when cherry season is over...
...dinner was a simple salad, Tunisian Bread, grilled tofu, and the rest of the spinach...
...I had soaked some dates for another recipe...and ever frugal..I used the soaking water mixed with some Dijon mustard and vinegar to make a rather passable dressing...
...but the star of the show was this twice baked sweet potato...it had been baked a couple of nights ago...and when no one ate it...I just stuck it in the fridge just in it's skin...thinking I'd take Elizabeth's advice and add it to some oatmeal...but I hadn't and I wanted to use it up...so I just peeled and sliced it and baked it again...it got kinda crispy and carmelized on the edges and it was so delicious...I was really glad I didn't throw it away...

...W.I.P. Wednesday...

...this is another frugal find from last fall...
...I got these sandals at Stuff-Mart for $1 at an end of summer sale last year...and I stuck them in the closet and kinda forgot about them...

...but I got them out and started wearing them around the house just to break them in a bit...and they don't stay on too well...
...so I thought I'd remedy that with a simple crocheted strap...which took about 14 minutes...haha...
...and although they look like they are white-white...when you crochet with white crochet thread...you can see that they are not in fact quite white...

...so using my experience dying with coffee...I made some rather weak tea...as I only want to 'take the edge off' of the white thread...and dipped just the new strap into that...and let it dry...
...and now they are perfect...

...even though I forgot to add the chopped almonds...
...it was still delicious...light and fluffly...

...Over the Weekend...

...well...let's see...
...we made overnight waffles...some plain...
...and some with fresh blueberries...
...they were delicious...
...we opened a new jar of homemade sauerkraut...
...also delicious...
...we had the funeral I told you about yesterday...
...my avocado has a little root...I'm really hopeful this little guy will live...my first ever sprouted avocado...
...our local farmer brought us the very first homegrown tomatoes of the season...
...and they mowed the field next door...

...how was that for randomness?...

...Dinner but no movie...

...we just had whatever we could lay hands on in the fridge for dinner as the Man was still working on a funeral sermon...

...on my TV tray...I had some (already) grilled tofu smothered in BBQ sauce...a salad...vegetarian baked beans...and leftover potato salad...

...and I was on my own for the evening...so I watched Dr. Who...I'm on Season 8 now...with John Pertwee as the Doctor...these originally aired in 1971...and I never watched these first 3 Doctors...my Doctor...was the 4th Doctor - Tom Baker of course...so I can't wait to revisit those episodes...but I've really enjoyed these first 3 Doctors...I've been watching them whenever I have a few moments to kill (knit) in front of the TV...several episodes of the original seasons were lost and I had to watch them on YouTube as reconstructions from stills...because for some reason they had the sound but not the video...still fun though...and since the Man rarely watches them with me...he's definitely not a 'Whovian'...and he abhors the way I watch them just a few minutes at a time...but last night I watched for about 2 hours...it was fun...

...Friday Favorites...Veganizing Pre-Packaged Mixes...

...sometimes at the grocery store I see a pre-packaged food that looks good...and I read the label only to find that it's not vegan...and sometimes I use that as a starting point to create a similar dish...
...but I saw this box and thought Scout would like these cookies...
...so I read the label and was surprised to find that the ingredients are vegan...even the chocolate chips...
...so basically I followed the directions ...just subbing vegan butter and flax seed goo for the eggs...
...there were two packets in the box...one just looked like brown sugar...
...so I mixed that with Earth Balance and my vegan egg until it was nice and creamy...
...and then dumped in the other packet which was the flour and chocolate chips...
...and mixed it all up...one of the best things about vegan cookie dough is that you can eat it raw...
...I used my medium sized scoop to form the cookies as I wanted them to be fairly large...
...they turned out perfectly...
...this box made one dozen of the big cookies...and they were delicious...

...so this experiment veganizing a pre-packaged mix was a success...

...W.I.A.Y. ...

...breakfast was a smoothie and an apple...
...followed by a bagel and some almond meal (leftover from making almond milk) probiotic cream cheese...
...I made Nanny's Mexican Cornbread for dinner last night...and I love it leftover...
...so I added a muffin to one of my 'bowls'... beans, collards, sweet potato and salsa...and a perfectly ripe avocado...
...and then I didn't snack in the afternoon...as is my wont...
...because the Man and I spent the afternoon in the kitchen together making a delicious meal of eggplant parmesan...
...with it we had salad, noodles, marinara and French bread...and the kiddos were home for dinner...so it was really nice...
...and I can only take credit for the execution of this delicious cake...as the idea was all the Man's...it's a veganized lemon cake mix...
...filled with vanilla pudding....and topped with cream cheese icing...
