...I buy a bag of organic lemons about every other week...and I keep them in wide mouth jars in the fridge...
...and usually before I juice them for my daily lemon water...I grate some of the zest from the outside...
...and then I pack it up and put it in the freezer...and then I have lemon zest on hand whenever I need it...

That's another great idea from you. Sadly I waste a lot of fresh lemons. They go bad before I use them up. But the other day I made some lovely lemon loaf and was able to use one of my recently purchased lemons! I should do more often and freezing the rind sounds like a good idea to help me.
