...5.17...Tuesdays with Julia...

...this is another recipe without a french title...
...we don't often eat wild rice and when we do we usually mix it with regular rice...
...this rice cooks mostly in the oven...so it's not difficult and it's delicious...

...5.16...Over the Weekend...

...we did a very small shop this week...because we're trying to get everything used up before we head out to New Mexico to see Our Airman...he has some training out there...just him no grandbabies this time...but we'll take just about any opportunity to see him...so we're going to fly out and spend evenings with him after he finishes his classes each day...we're really looking forward to it...
...and I've been dodging rain showers to ride my bike each day...we've been having mulitple ones...and I thought it was funny that these birdies did not try to get out of the rain...but seemed to be happily sitting there on the fence...or...maybe they're watching the back door to see if I'll put their bird feeders back up...
...the Man and I celebrated our anniversary...quietly at home...with a delicious dinner...I Griddler-ed some tofu onion and squash...
...and steamed some asparagus and red potatoes to go with it...it was just a nice quiet evening at home...
...we got quite a bit done on the puzzle...Mom had mentioned when she was here that she was surprised that I had time to work puzzles...haha...so I reminded her of Nanny Gladys' "five minute" saying...that you can accomplish a lot in 5 minutes...and there are a lot of 5 minutes in a day...and that's really how I work puzzles...it's pretty rare that I sit down for an hour of puzzle working...although I think that would be a delightful way to spend an hour...and she also mentioned that she'd never seen anyone separate the colours out the way I do...but I think I would spend a lot more time looking for a piece if I didn't have them separated...I sometimes put them in the wrong group...like if they have purple and orange...and I think I need a purple piece...it might take me a while of looking at purple before I finally look at the orange ones...haha...
...so here's the progress so far...oh there's a lot of glare there...
...so here's a different angle...this is a fun puzzle...

...5.14...Dinner and a Movie...

Pizza Night...!

It seems like it's been a long time since we've had pizza...but it's probably not been really...but I made a poolish...and make crusts...
...I made a quick sauce...and sliced some olives...because I like one olive in every bite...haha...
...and assembled the pizza...chao cheese and vegan parmesan...
...and then added the olives...but the Man assembled his pizza and had quite a bit of peppers left over...I wasn't initally going to add peppers...but I did just so they wouldn't go to waste...
...it turned out really good...but I still think I would have prefered it without the peppers...
...and I whipped up some vegan ranch and made a big salad...

...and it was the Man's turn to choose the movie...and we contemplated starting the new season of Shetland...but the episodes are all continued...so we may save it until we can watch them more consecutively...'

...so in the end...we just dove into YouTube for a couple of hours...it was fun...we watched some news bloopers that were funny...and I remember one of commercials from the 70s...I thought I would remember them all...but I did not...they were still fun to watch...because...things have changed a lot since then...and some cooking videos...of course...and that's about how we spent the Movie Night...haha...it was all fun...

...Friday Favorites...a Visit with Mom...

...Mom had been on one of her round robin trips to visit her brother...her step daughter and brothers-in-law...and then she stopped by my sweet sissie's for dinner...and then came here...
...and she showed me a couple of photos they had taken there...this one is just a typical Mom & Daughter shot...and Duane said TWINS when he took the photo...
...so then Karen went and got glasses and stooped down a bit so they'd be the same height and took another one...and they are indeed TWINS...haha...
...so I did the same thing...natch...I put on a t-shirt tie-dyed by my Sissie...and this is a 'normal' Mom & Daughter photo...
...and this is my #Twinning one...but you can see that I don't look nearly as much like Mom as Sissie does...

...and that's funny because when we were growing up EVERYONE always commented on how much I looked like Mom...and indeed there are pictures of us both as children and I did look a lot like her as a child...but now...not so much...Karen looks much more like her now...
...and I packed up Sissie's birthday present and the card we send back and forth each year...I'll show you everything next week once I'm sure she's opened it..
...for breakfast with Mom...I made these gorgeous and delicious Fat-Free Vegan Sugar-Free Orange Cranberry Muffins...and you know how I 'document' things here on the blog so that I can make them again...haha...
...they are so perfect...and they made the house smell like Christmas...I used to make an Orange Cranberry Bread in the breadmaker on Christmas morning...I started it first thing and then it baked while we were opening presents...this is much quicker...
...we just moved the puzzle to the end of the table...you can do that with family you know...haha...you can see a little bit of the progress here...the edges are all done...
...oh so good...

Vegan Fat-Free/Sugar-Free Orange Cranberry Muffins

2 cups all-purpose flour, sifted
1 ½ tsp baking powder
½ tsp salt
½ tsp baking soda
⅓ cup Stevia...the kind that measures the same as sugar...
1 Tbsp orange zest
½ cup orange juice...I just juiced the orange that I'd grated the zest from...
¼ cup unsweetened applesauce
1 tsp vanilla extract
½ cup almond milk
½ cup dried cranberries

1. Preheat oven to 375° F.
2. Prepare muffin tin by greasing generously with Earth Balance...you can, of course use paper linings...but the crust on these muffins is amazing...and I guess if you want them to be completely fat-free you'd have to use the liners or a non stick pan...
3. In a large bowl, add flour, baking powder, salt and baking soda. Mix together with a fork.
4. In a separate bowl, whisk together orange zest and juice, applesauce, vanilla and almond milk.
5. Stir the wet mixture into the flour mixture until just combined.
6. Fold in cranberries.
7. Fill each muffin cup about ¾-full.
8. Bake until golden and a toothpick comes out clean (20–25 minutes).

Makes 8 muffins.

...5.12...What I Ate in a Day...as a Vegan...

...first breakfast (ref: The Office...Pam's pregnancy)...was a grapefruit..which I just peeled and ate out of hand...

...have y'all ever seen this before...I have not...
...somehow the grapefruit seed sprouted inside the fruit...which by itself is not all that surprising...I've seen it in green peppers a lot...and a few times in tomatoes...
...but what is really interesting is that it's green...which I would not have expected at all...this fruit was in a bowl on the counter well away from the window...so how is it green...

...anywhoo...it did not stop me from eating the fruit...haha...
...and then second breakfast...was some homemade bread toast and Earth Balance and blackberry jam...there was only maybe a half hour between first breakfast and second breakfast...haha...
...lunch was a delicious bowl of the Mother's Day Tom Yum soup...just added some leftover noodles...
...and then for dinner...the Man made eggplant parmesan...a slightly different version to mine...
...but so delicious and sliceable and pretty...having been baked in the lasagna pan...genius...
...after dinner/bedtime snack...a bowl of "Daddy's" cereal...
...aka...Cheerios and bananas...

...5.11...W.I.P. Wednesday...

...well...I'm pretty much obsessed with this little dollie...I've got a couple of little secret things that I need to finish up soon too...so I'm going to have to put her aside to finish them in a timely manner...haha...
...but her hair is finished...and I had to add another (less shiny) yellow/cream baby yarn...as I actually ran out of the first skein...I was surprised by how much yarn it took to create her hair...
...but it's a nice thick head of blond hair...
...I'm just going to pull it back to keep it out of the way while I continue knitting...
...actually I'm going to braid it...so it is stylable...haha...

...the pattern doesn't say to do the hair now...but since I'm knotting each strand I thought it would be much easier (only possible actually) while I have access to the inside of her head...
...and for sort of the same reasons I'm going to to ahead and embroider her face...the pattern doesn't say to do it now...so I'm guessing you can do it all at the end if you want to...

...while you're knitting the face you make little purl stitch 'markers' for where the eyes/nose/mouth will be...so that's helpful...I just embroidered a little smile...using the leftover yarn from my Easter sweater as it's a nice fuschia colour...

...and another interesting thing was that before I started the face embroidery...my camera 'automatically' changed it's setting to "Infant"...which I thought was sweet and funny...once she had eyes though it recognized her as "Portrait"...haha...
...and then started on the eyes...there's a really good instructions page for the face embroidery here...
...a little bit of blue...
...and some white...and her face was finished...
...and then I stuffed her head and continued knitting her neck...the shaping is pretty amazing...and she gives the sweetest instructions to..."Imagine a human shape and stuff it with fibers."

...and they were overcooked to our taste...but most of her vegetables are...last week's leeks though were an exception...

...5.9...Over the Weekend...

...first of all...I hope all of you Mom's out there had a wonderful Mother's Day...
...the Man and I went grocery shopping...because he wanted to go by the Asian Market and get things to make a Mother's Day dinner for me...

...I don't think there's anything usual here...except maybe the bag of little gorgeous red new potatoes...
...but this is the haul from the Asian Market...and that's going to be a pretty 'spendy' bowl of soup...haha...
...it got to be midday while we were out...so we stopped by a new-to-us Mexican Fusion restaurant...just a few blocks from the Asian Market...and got takeaway...I got a bean burrito...and they had a salsa bar so I loaded it up with their corn and black bean salsa and pico de gallo...so that made a nice late lunch for us...
...and this protein powder arrived from Amazon...it's yummy...we like their peanut butter one too...especially with banana blended in...
...I had put a loaf of whole wheat bread in the bread machine in the morning before we left and it was ready when we got home...so I got that sort of unevenly sliced...even with the slicing guide I didn't do such a good job...haha...now you know why they say..."the best thing since sliced bread"...because sliced bread is a really good thing...haha...
...so then Saturday evening we were still pretty full up from our late lunch...so I just boiled several of those little new potatoes...
...and we each had a big bowl of those as a kind of snacky supper...
...Sunday (Mother's Day)...after Church...the gifts started to arrive...a nice box of flowers from Our Airman...
...so we got those into the vase...
...and then a new puzzle...from the Man...YAY!...
...and then this adorable little package from our granddaughters...
...it's a sweetly beautiful bracelet...with both of their birthstones...and a little heart engraved Grandma...
...it's so sweet...I'll wear it a lot for sure...
...and then the Man got busy on his Vegan Tom Yum soup...lots of special ingredients...but really not too time consuming to put together...and he neatly packaged all of his leftover lemongrass, tamarind, lime leaves and thai peppers and put them in the freezer...because he's got plently to make this soup a few more times...haha...
...so he let that cook for a bit...
...and then added all of the fresh veg...
...and we had a delicious Vegan Tom Yum soup for Sunday dinner on Mother's Day...this is actually my first time ever having Tom Yum soup...
