...10.21...THE VERY LAST Tuesday's with Julia...

...for the final 611th recipe from Mastering the Art of French Cooking wound us being Vegan Crème Brûlée...as I had never done the recipes in any systematic order...

...and this one is a bit odd in that in the two versions that I have the origin descriptions are entirely different...hop over to The Vegan Version if you want to read more about that...

...and then the other really odd thing was that there was no recipe...in fact Julia tells you to spread a layer of pralin over the cream instead of the traditional crisp sugar topping...so I made both versions...
...and of course they were both really delicious...the crunchy slightly burnt sugar is delicious with the vegan cream...
...and the pralinéed one was really good too...

...10.14...Tuesdays with Julia...THE FINAL COUNTDOWN #2...

for this next to last recipe in The Vegan Version project...
...we made the OIE BRAISÉE AUX MARRONS/CANETON BRAISÉE AUX MARRONS...after breaking down and ordering chestnuts from Amazon as I didn't want to wait until Thanksgiving to make this...
...but it did make a pretty presentable dish that would definitely be suitable for Thanksgiving...

...the very last recipe in the book...and it kindof surprised me that I'd not already done it...Crème Brûlée...I'm looking forward to it...

...10.7...Tuesdays with Julia...THE FINAL COUNTDOWN #3...

...we're hosting a little neighborhood gathering the day after tomorrow...our little subdivision only has 13 houses...and so all of the ladies gather at one of our homes just to catch up with each other and visit...it's a lot of fun...the Man calls it 'my bookclub without the book...hahaha...

...anywhoo it's my turn to host...and I wanted to make these little bouchées...I love the French word for mouthful...isn't it sweet...
...they're just a breadstick with some potatoes in...which Julia says makes them tender...I tried one fresh out of the oven and they are crispy on the outside and tender and delicious on the inside...I'd definitely make these again...
...and I put them in my Luz de Nambé nickel bowl for the party...I'll take a photo at the party and post it on Friday...

...we made the next to the last dessert for this project...
...the pretty VEGAN SOUFFLÉ DÉMOULÉ AUX MACARONS...
...it went perfectly with a nice cup of tea...
...and it was so delicious...I'd definitely make it again...

...9.23...Tuesdays with Julia...THE FINAL COUNTDOWN #5...

...this is a whole recipe simply titled "CANNED ONIONS"...and Julia has this to say about canned onions...All the brands of canned “small boiled onions” we have tried have tasted, to us, rather unpleasantly sweetish and over acidulated; they also need more cooking to make them tender. However they are so useful in an emergency that we offer the following treatment which improves them considerably...

...remember that this book was written in the early sixties...and maybe canned onions were more of a 'thing' then...and there are a couple of varieties of canned onions for sell on Amazon...maybe for preppers...but they are already chopped and sautéed...and Julia is obviously talking about small boiled whole onions...I can't even find an old image of such a thing on the interwebs...but they sound sort of like jarred cocktail onions...

...so I searched Amazon and found some cocktail with just a few ingredients (onions, water, sea salt, acetic acid, citric acid)...and since she comments that the ones she had tried were overly acidulated...I thought that these would do just fine...kind of spendy though...over $8 for a side dish...
...we had it with veggie burgers and air fried potatoes...it was a pretty good and expensive side dish for that particular meal...

...we made the very sweet and fluffy VEGAN ÎLE FLOTTANTE...
...it was good...like eating custard with whipped cream on top...the Man asked what it was...and I said it was basically vegan fluff over custard...and he tried it and said yep...that really was just fluff...

...we made the Vegan Daube de Boeuf à la Provençale...using Nori for the anchovies...
...we served it with rice and green beans from the garden...
...it was surprisingly good as I didn't think fish and seitan went together...
...and we tried the leftovers cold with french bread and a salad as Julia suggested and I liked it like that as well...

...9.2...Tuesdays with Julia...the FINAL COUNTDOWN...#9...er...uhm...#8...oops...

...remember how last week I said there were only 10 recipes...well...really there were only nine...
...you know how sometimes Julia's recipes have more than one name...and sometimes she included two things in one recipe...I had them on separate lines in my spreadsheet...but they are actually the same recipe...Endives à la Grecque/Fenouil à la Grecque

...I had thought that I'd look for endive at Mom's posh grocery store...but now I don't think I'll bother...
...and apparently there's only one Fennel recipe in the entire cookbook...
...it makes an attactive side dish...and it does smell a little bit like licorice...
...we served it with baked tofu, rice, green beans from the garden, and a carrot salad...we didn't either one like it very much...it does taste like licorice/anise and we don't care for that flavor...but it isn't sweet here...which helps some...and it's also cold...as I think a hot licorice/anise dish sould be stronger...so although we will definitely not be making this again...it wasn't horrible...we would have probably enjoyed the endive version more...haha...

...8.26...Tuesdays with Julia...THE FINAL COUNTDOWN...#10...

...Oh my goodness!!!...there are exactly TEN recipes remaining in this journey through Julia Child's Mastering the Art of French Cooking...

...and I've already mentioned that the grocery stores here are not likely to have any chestnuts until closer to Thanksgiving...so the Duck/Goose will have to wait until then...I'm going to try and find the endive and fennel during this weekend's shopping trip...

...and the canned onions I'm completely unsure about...Amazon does sell canned onions...but they are already diced and sautéed...so...if I can find some jarred cocktail onions that aren't pickled I'll probably go that route...
...for this #10 recipe in the countdown...we made Pommes de Terre Parisiennes/Pommes de Terre Sautées en Dés...which is just a finely diced potato cooked in vegan butter...
...I used the same pan to sauté some Brussels sprouts...
...and we had it with tofu steak, Brussels sprouts and a salad...it was a nice potato side dish for that meal...the Man ate his with ketchup...I did not...

...we made the Oignons à la Grecque...they're already vegan...
...and just had them with a 'regular' vegan meal...rice, broccoli and baked tofu...
...and these are good...a nice cool salad-y pickle-y thing...not a typical warm veg side dish...

...we made another of the gelled cold dishes...probably the last one...VEGAN POULET EN GELÉE A L’ESTRAGON...another rather pretty presentation...it tasted fine...I'm just not a huge fan of tarragon...
...we just served it with some toasted french bread and tea for a light luncheon...
...it is a pretty dish...but again...we just don't serve many jellied cold vegan meat dishes anymore...haha...

...y'all....I sorted my spreadsheet of recipes...
...and these are all the ones that I have left...WOW!...the two requiring marrons (chestnuts) will probably have to wait until around Thanksgiving as that's when chestnuts will be available in the grocery stores for Christmas...

...fennel and endive are also pretty difficult to acquire here...but I'll do my best...
...this week we made the Vegan Sauté de Boeuf à la Provençale...and it was pretty delicious...a nice combination of flavors that I like...nothing odd...haha...

...we made the Vegan Suprêmes de Volaille en Chaud-froid à l’Ecossaise
...I just carved the Suprêmes out of a block of tofu...
...and then I cut the leftover bits into strips that I'm going to use to make some vegan BBQ later...
...we served it for lunch with a salad from our little garden...it was really creamy and good...
