...Tuesdays with Julia...

...we made Vegan Crème Plombières au Chocolat...using the silken tofu that I'd made earlier...
...such a pretty dessert...
...and it was delicious too...and all of the particulars are over at The Vegan Version

...Over the Weekend...

...it was the weekend for the Community Breakfast at Church...
...so...I didn't make breakfast at home...just some of the delicious coffee that my sweet brother gave us last weekend when we were visiting...
...right after the breakfast...I did the weekly vegan shopping...

...and when I was checking out at the regular grocery store...the sweet teenaged girl and I were just chatting...and she was commenting on the tofu...and all the veggies I was buying and asked if I was vegetarian...and I said...almost...I'm vegan...and she smiled and said...'I've never met a vegan before'...so sweet and cute...
...anywhoo...of note in this week shopping...these flavored beans...I thought we'd give them a try...
...I bought two bags of these mini peppers...we'll grill some...but I love to just eat them fresh as a snack too...
...I stopped at the farmer's market...and got some fresh peaches...the first we've had here...but I had a delicious one up at Mom's last weekend...I love peaches...and I loved that these still had the leaves attached...little baby new potatoes beside the peaches...also yum...
...a bunch of fresh tomatoes line the windowsill...and I wanted one for lunch...
...so I chose the largest one and sliced it open...
...only to find that I was almost out of vegan mayo...so not a problem...I just whipped up another batch...
...I love making this vegan mayo...if you've not tried it you really should...I love it when the emulsification 'happens'...it's magic...
...so thick and creamy...
...I keep it in a little jar...
...then I washed the cucumbers I'd gotten at the farmer's market...
...and sliced them up...
...because I saved the leftover refrigerator pickle liquid...
...heated it back up...
...and poured it over the sliced cucumbers...I hated to waste it...I'll let you know how they turn out...we'll see if you can 'reuse' pickle liquid...
...the Man washed and cut up the collards...
...and I did the green beans...these green beans and tomatoes were a gift from one of our gardening parishoners...so thankful...
...just cooked on low on the stovetop with very little liquid...they're the best...
...then I had bought these cranberries on sale for 49¢...and wanted to use them in some muffins or scones...
...so I just veganized the muffin recipe on the bag...by using vegan butter and sour cream and a vegan flax egg...easie peasie...
...and they turned out really really good...

...Sunday after Church we went out for Mexican...and sat around there for a couple of hours...

...and I gave Jack a bath when we got home...and that's about it for the weekend...

...Dinner and a Movie...

...we had brinner...I love having breakfast for dinner almost as much as I love having breakfast for breakfast...
...I had some golden delicious apples that I wanted to use up...so I chopped them up for some applesauce...
...4 apples made just enough applesauce for 2 people...
...and then I was rearranging some things in the big freezer and I found a jar of country ham crumbles from the no-longer-existant SDA store that we used to go to every time we visited Asheville...I still miss it...

...so I made some vegan gravy...
...and some 2 ingredient probiotic biscuits...and I wanted to try the strawberry and blueberry jams that my sweet sissie had given me for my birthday...so I also made some toast...because I prefer jam on toast...and I saved the biscuit top for the applesauce...everything in it's place...right?...

...and the movie was The Kind Words...it was...as usual for me...a movie about some people...without giving too much away...it's about 3 siblings whose mother dies...and they find out that the man who raised them might not be their biological father...it was sweet and sad and sometimes funny...I enjoyed it...can't speak for the Man...it was subtitled...and he had a book...

...Friday Favorites...

...what to do with a garbage bag full of fresh kale...
...wash it really well...like about 3 or 4 times...to be sure you get all the sandy grit off...nothing's worse than chewing on sand...right?...
...cook a tub of fresh mushrooms...
...and add a bunch of kale to it...I normally do this is spinach...but any type of greens will do...and this kale is perfect...
...make a big ol' kale salad...chop some kale finely...massage it a bit...and sprinkle with dried cranberries and pecans...
...and drizzle with balsamic...so yummy...I love fruit in salads...do you?...
...and then just cram the rest into an Instant Pot...and steam for a few minutes...and you'll have about 3 servings of greens...haha...it's true they wilt down considerably...
...next up in the favorites this Friday...homemade silken tofu...
...same exact process as last time...except I made a couple more cups...I'm going to make another creamy/pudding-y recipe with Julia next week and I needed some more silken tofu...
...it turned out perfectly again...
...and finally...this is what was printed on the back of the pretty rectangular dish my sweet sissie gave me for my birthday...barely legible...
...and you know me...I'm just nerdy enough (haha...I'm plenty nerdy enough)...to look that up on the internet...and I found a clearer photo of the same print...and then an article about the John Steventon and Sons Pottery, Burslem

...it's... a copy of the classic Rogers ware for it states: 'Reproduction of Rogers 1786'. It has been found in blue, pink and green. (The original was potted by John Rogers & Son c.1814-36, and is known as "Rogers Elephant." - A floral border encircles a striking transfer scene depicting a man and an elephant near a stream, with a pagoda building and surrounding garden.)

...What I Ate Yesterday...As a Vegan...

...I started off the day with one of my favorite breakfasts...Cheerios and bananas...these aren't really cheerios...they are organic toasted oats...but still nostalgic for me...
...later in the morning...I sliced open a perfect avocado...
...and made some avocado toast...
...with some tofu and tea...
...then one of our gardening parishoners dropped off a bag of garden veggies...
...so I sliced up some of the yellow squash...
...and made a small squash casserole for lunch...
...and just had that with some veggies...and tofu...of course...
...this is the 'pullable' seitan I made the other day...adding the cabbage shreds worked perfectly...
...so we had BBQ chick'n sammies, french fries, sauerkraut, carrots and slaw...and kale from my Mom's garden in the middle...and baby limas on the side...
...and the new jar of sauerkraut is progressing nicely and it's a good thing too...as you can see my current jar is almost empty...I have the making of the new jar timed just right...
...my sweet sissie forgot and left her bag of smoked almonds here...so I've been snacking on those all day long...so yummy...
