...for breakfast before shopping...I just had a slice of leftover quiche and toast...it was a good brekkie...
...I got all of the usual things...we were out of flour...and Food Lion had $2 off of the Hellman's Plant Based mayo...but there was a limit of one...so I got my groceries...and took them out to the car...and then went back in and got a few more things...including another mayo...they had plenty of the plant based variety...but they were running out of the regular kind...
...and another Cherry Lime Poppi treat...
...I've been picking a couple of handfuls of the Rattlesnake beans every day...and one or two of the striped zucchini...
...so I prepped the beans...
...and cooked them in the outdoor kitchen...
...inside...I cooked some beets from the neighborhood veg stand...
...and he had tomatoes...ours are still green so I got a few for $1 a lb...and put them into the windowsill like I always do...but the Man didn't want them there as he thought it might stain the paint...haha...so I put them in a bowl on the counter...
...the Man had come across a super easy egg-less squash casserole recipe...so we sliced up the squash...
...and then you just add some onions and vegan cheese and a little bit of soy sauce...so intriguing...and it was delicious...I'll definitely make it again...
...and I used the blueberries from our bushes...
...they are so gorgeous...plump and sweet...
...to make my favorite cobbler...funny that they specify 6 spoonfuls of dough...I guess because it's supposed to be 6 servings...
...also cooked in the outdoor kitchen...so it got a little bit too done on top in the toaster oven...but still fine...
...and finally...I made a batch of salsa...from an old Mexican Restaurant recipe that I used to use a lot...but have not made in years...I need to go back to making it on the regular...

...6.27...Dinner and a Movie...
...I had a little bit of okara still left from all the soymilk making...so I just added it to a besan quiche...along with some spinach...a frozen solid block of red/green peppers and onions from the freezer that I wanted to use up...and the Man's leftover mushrooms...
...and just threw that all together...with no crust...it baked up perfectly...
...the sides were peas...Griddler-ed cabbage...potatoes...and slice cucumbers and tomatoes...it was all delicious...
...and the movie was another episode of Firefly...we only have the 'movie' still to watch and it was made after the series was cancelled...Jayne got his hat already and that was very cute and fun to watch...
...I finished reading Donna Tartt's The Little Friend...and I recommended it to mom...since we seem to have a book club of two...haha...I've put a hold on her newest book Goldfinch at my library...but there's a wait of course...
...so while I'm waiting I piked up Anne Frank's Diary...the Definitive Edition...it includes all three versions of her diary...labeled version A, B and C...with A being the first one she wrote as a child...and B being the one she was re-writing while she was still in hiding as she already intended to publish it when the war was over...and C being the one we all read in Jr. High that was edited by her father...omitting things he didn't like or thought were not 'appropriate' for young people... it's really good...

...6.26...Friday Update...
...snapped a photo of the bunny in the yard because Little Sissie asked during a FaceTime if I could show her the bunny...and I explained that it wasn't a tame bunny so I couldn't just go out and find it but that I'd send a photo the next time I saw it...
...and oddly...unlike the infamous Peter...I don't see any evidence that this bunny is eating anything in the garden... ...the garden continues to flourish... ...we've not gotten any cucumbers yet...but this one is covered with blooms... ...and we do have a Hubbard Squash forming...I'm going to make a net of some sort to support it as it grows... ...and we've got a lot of green tomatoes...you know I want to pick a few for fried green tomatoes... ...and a little update on the plugs of grass we planted out front...they're doing really really well... ...but under the yaupon in the shade there's a patch that's getting quite weedy...I pulled up a few weeds so you can see the new dirt underneath...the grass seems plenty healthy but I don't want it to get crowded out by the weeds...mostly what we called Toad-Berry when we were little...I guess because we thought toads ate the berries...but actually called Mock Strawberry (Potentilla indica)...I was surprised to read that the berries are actually edible for humans and people add them to smoothies and salads...who knew?...
...so...I've made a plan to spend an hour a day this week pulling the weeds...it's going to be about 100° F (38° C) this week...I'll keep you posted...

...6.25...Delicious Vegan Food we ate...the Okara version...
...for every quart of soymilk you make...you'll have a little over a cup of okara...it's just the ground up soybeans...so I gathered some ingredients...the bag of okara...some vegan mayo...peppers onions and capers...
...and some spices...supposed to be Old Bay...which I thought we had...but we had these other two 'seafood' seasonings...and smoked paprika...
...I air-fried the patties and they turned out great...
...and we had them with homemade tartar sauce, corn off the cob, and a salad...it was so delicious...
...and the recipe makes a lot so I packed them in a recycled cereal bag and popped them in the freezer...
...I used Miyoko's San Franciso Fab Cakes recipe...it's included in this YT vid...
...just rolled them out thinly and cut into little squares...
...and then I made some herb-y crackers...recipe from CookEatLiveLove...
...and then finally I used up the rest of the okara to make some hummus to go with the crackers...recipe from the Conscientious Eater...
...I'm thinking little rectangles will be more dip-able next time...
...all delicious though...
...my conclusion from just these three trial of quarts of soymilk is that there is no way that we could actually eat and use up all of the okara that would create...these recipes were really tasty though...but I'm thinking the bulk of the okara would probably become compost...I think the garden would love it too...

...6.24...W.I.P. Wednesday...
...a couple of FOs (finished objects - for the non-knitters)...
...I made a bunch of little stars in patriotic colours...
...and some matching chained headbands...
...and combined them into two adorable little headbands...
...they'll be perfect for the girlies to wear to the parades and fireworks...
...and the Jayne Cobb hat is finished...
...it just needed a pom-pom on top...so I got a vintage pom-pom maker...
...it included instructions on the back...
...but it didn't work out as it was way too small...you can see a couple of suggested projects on the front...and they're using that size of pom-pom to make little tufts for a seat cushion or a rug...which would be an interesting little project...but... ...I just made an appropriate sized pom-pom using some cardboard and attached it to the top of the hat... ...and then I got a box of paper fluff and copied out the letter that Jayne received in the package ...put the hat in and sprinkled over some of the fluff because when Jayne opens the box and puts on the hat there are still bits of paper attached to it... ...so that completes the 'experience'...haha...

...6.22...Over the Weekend...
...I had a fairly unconventional breakfast to start the weekend...banana nice cream...
...it was delicious and cool...and fun...I think the Man went the traditional breakfast route and had a bagel...
...apparently I'm buying too many bananas and we're not able to eat them all up before they get spotty so I've been freezing them and adding them to smoothies too just so they don't get lost in the freezer... ...and then of course it was time for the weekly shop... ...notice that I bought no soymilk at all...everything else was pretty normal though... ...because we got our shipment of organic soybeans...and I'm trying out a few soymilk recipes...I still have my SoyQuick soymilk maker that I got in North Dakota where it was also difficult to find soymilk in the grocery store...and Miyoko has a YT recipe that doesn't require any soaking so I'm excited to try that one...and we'll have a taste test... ...there's going to be lots of okara to deal with if we ever have to fully rely on homemade soymilk...so I'm going to look into recipes for that as well... ...and it's also pretty time consuming...thinking of combining the Miyoko hot water method and the SoyQuick for a quicker version... ...very satisfying to make though...and like the WestSoy version I've been buying...my homemade version has exactly the same two ingredients...water and soybeans...
