...9.30...What I Ate in a Day...as a Vegan...

...the day started as it usually does with a big jug of lemon water and vitamins...
...while we were up in the mountains...the Man's Mom found these vegan croissants...and we brought some home...
...so I toasted one and had some of Mom's delicious peach jam that she traded with us...haha...we had given her a jar of our pineapple...so we kind of traded...
...later in the morning I got hungry...so I made a piece of toast and broiled some Violife cheddar on top...it was so delicious...
...leftovers for lunch...refried beans...some Foreman Grilled sweet potato...a flour tortilla...and a sliced store bought roma tomato...the days of fresh garden tomatoes sadly are over...
...afternoon snack was a bunch of organic grapes...and I do mean a bunch...I ate almost the whole bowlful...
...remember when we had chick'un and rice a couple of weeks ago...and I said that that gravy would be really good for a vegan pot pie...we I made some vegan biscuits for a sort of deconstructed pot pie...
...so nice and light and fluffy...I do love biscuits...
...crumbled it up...and poured the gravy and mixed veg over...
...it really is the perfect comfort food...

...9.29...W.I.P. Wednesday...

...so the day (evening really) before we were going to head back up to Mom's...I wanted to make a new scrunchie for my hair...it's getting pretty long and I wanted it up and out of the way for the construction work to come...so I got one of those strong rubberbands that come around kale and broccoli and such out of the drawer...and just some random pink yarn from the stash...
...and just did one row of single crochet around the rubberband and then a row of shell stitch...
...and decided that it would work...
...and then I also decided to make each of my small nieces a hair doodie of some sort...so I made a headband for the smallest one...and a couple of those little pop clips decorated with small flowers for the two sisters...and another scrunchie just like mine for the niece that stayed with us a few weeks ago...as she has nice long thick hair...
...and added a sweet little flower to the headband...I loved how it turned out...
...and for the only nephew...I cast on for a toboggan...thinking I could probably finish it during the evening at Mom's...
...and I thought a ring of skulls would be just the thing for decoration...so I just downloaded this simple cross stitch pattern for that...
...and by the end of the evening I had all the motifs done...
...and the next morning I finished up the decreases...
...cinched in the top...and wove in all the ends...I like the reverse image of the skulls here too...
...and it was a huge hit with the nephew...
...it fit him perfectly...and he loved it...

...9.28...Tuesdays with Julia...

...we made a VEGAN SOUFFLÉ À AU CHOCOLAT...and like the other soufflés they poufed up very nicely...
...you can see that the shape of the ramekin makes a pretty big difference in how tall it will rise...
...they were really creamy and rich and light and delicious...

...9.27...Over the Weekend...

...for the second weekend in a row...
...we headed up to the mountains...
...and arrived back to the place we affectioknit-ly call 'home'...
...because work was already well underway on Mom's birthday present...
...and my sweet sissie is doing a great job of documenting everything over at McCraw Sails...so hop over there for all the details...
...the four siblings (and their spouses and children and children-in-laws) are building a covering for Mom's back patio...it'll be an awesome space for her to sit and read...and just enjoy her beautiful property...
...in the afternoon everyone took a break from building to celebrate Mom's birthday together...my sweet SIL did all the planning and orchestrating and other in-laws and grandchildren brought lots of treats...so it was an awesome party!
...my overstuffed plate of vegan food...and I went back and got a plate-ful of fruit too...
...and then it was time to load up the dessert table...with Birthday cake...apple pie...and blackberry cobbler...and huge garbage cookies...
...the pretty birthday cake was one of Mom's favorites...a Lady Baltimore cake...but I only remember her making a couple of times when I was little...
...and here's Mom ready to blow out the candle...as we sing Happy Birthday...
...and then Sunday morning the work continued...sissie is applying some pressure to the soffit from underneath so they can nail it in place...
...and then the first sheathing board gets hefted up...
...and a ladder placed for some rooftop work...
...and my sweet sissie snapped a photo of me working on the roof...don't I look like I'm having a good time...that's 'cause I was...

...we're back home now...and work continues on the back porch...it's always so much fun to get together with my brothers and sister and all the rest of the family...

...9.25...Dinner and a Movie...

...well we definitely went the easy route with dinner...I rehydrated some mushrooms...
...and then got a bag of stir fry veggies out of the freezer...
...and dumped those in with the mushrooms...
...added some stir fry sauce...
...simmered it for a bit...
...then got this bag of prepared noodles out of the cupboard...you could of course use any nood's...but these were super easy...
...and then just added in the noodles...
...into a bowl and topped with some baked tofu...it was a perfect alternative to takeout...

...and the movie was the next episode of Vera...BritBox currently only has two for the 11th season...but maybe there were more...I'm sure it was difficult to film during the pandemic...

...9.24...Gifts from 'Home'...

...Mom gave me a book she was finished with...50 Words for Rain...I'm looking forward to reading it...
...we got a few veggies...Mom said that the okra had done really well this year...so she gave us a big bag of that...
...she said the red ones don't stay red when you cook them though...they turn a darker green...
...so you know those are going straight into the Foreman Grill...
...they are so pretty...
...and then I got 5 bags of accidentally vegan vanilla wafers...they're the store brand from the grocery store near Mom's...I often make my own vegan vanilla wafers (using this veganized recipe) because vegan ones are so hard to find...
