...Vegan Zucchini Noodles...

...our grocery store had organic zucchini (courgette) on sale...so I bought 3...that's a lot of zucchini...

...I wanted to try some zucchini noodles...with peanut sauce...a recipe I saw a while ago over at The Fat Free Vegan...I had bookmarked it...but at the time midwinter zucchini were fairly expensive...
...she used a spiralizer...which I don't have...so I got out my mandoline...
...and started making noodles...
...one thing about the mandoline is when you get to the seeds you have to stop and turn the zucchini because your noodle would fall apart with seeds in it...I think the spiralizer is like an apple peeler in that it goes around the core...
...so...one zucchini makes about one serving of noodles...I'll keep the center part of the zucchini and add it to some spaghetti sauce (or something) later...
...so then I just made the sauce...
...and cooked it until the peanut butter melted and everything was nice and hot...
...and then added a few handfuls of noodles...
...I wanted the noodles to be hot (of course) but not cooked until they were mushy...so I did this off heat...
...they wilt a little bit...but you still get a nice bowl full of saucy/spicy noodles...
...which you can twirl up on your fork if you want...

  1. Yum! Looks so good; I love peanut sauce! This looks like a great thing to try with all the summer zucchini that's just around the corner!

  3. I have tried them. I saw someone make them using a conventional grater - long sweeps and the result looks a lot like the 'real' zucchini noodles. What surprised me is that they tasted more of noodle than vegetable. I shall make them again.
