Veganomicon Banana Bread...
...Scout had the day off from school today for Veteran's Day...
...so we slept a little bit late and made banana bread for breakfast...we baked the bread in our little milk glass bowls that I had gotten for my birthday - we just buttered them with Earth Balance and added the batter...I love the crust that it makes so much more than peeling off a paper liner...
...we are actually testing this recipe as one that I'll make again tomorrow to take to the bazaar bake sale...it definitely passed the test - it's delicious...
...we used the Lower Fat Banana Bread from the Veganomicon - it's so good - you really must try it...
...Scout prefers his a a big dollop of Earth Balance....
...I found the recipe here if you don't have the book - there are no instructions but you can probably figure it out - just remember not to use a mixer and don't overmix or you'll have gummy bread...

ReplyDeleteHow funny, I made this same recipe (but as little muffins) a couple weeks ago. Wee One has decided he no longer likes bananas which he once ate with gusto so we found ourselves with a few going past their prime. It was really good. I liked the way you baked yours, very cute idea!
