...Fermenting Foray...

...one (actually two) of the Man's Christmas presents was a couple of different types of fermenting kits...because he's been wanting to recreate his Mamaw's sauerkraut...she canned large quantities after it fermented and we don't plan to do that...but make ours in small batches and just keep it in the fridge...
...basically there are two ingredients...cabbage and salt...so the Man chopped up a bunch of cabbage...oh...and he also got a nice chef's knife for Christmas too...
...chopped cabbage...
...massaged with salt...
...and packed into jars...
...really packed with a wooden pusher...as you don't want any air pockets in the fermenting kraut...and all that liquid just comes from the cabbage itself...we didn't add any water...
...added the special little lids...and then set it aside to wait...

...have you ever made sauerkraut?...or do you even like sauerkraut?...

  2. I like sauerkraut but haven't tried making it. I like to eat fermented foods because they are healthy. I want to make kimchi.
