...for breakfast...I had a slice of whole wheat toast with peanut butter and a slightly over-ripe banana...it was still yummy...and tea...but you can pretty much assume I had tea with every meal...
...for lunch....I had a salad with pears and walnuts...no dressing...I just love fruit with lettuce...
...and vegan Chick'un and dumplings...
...over some delicious 2 ingredient (vegan yogurt and S/R flour) biscuits...
...I love a nice crusty biscuit...do you...or do you prefer them soft...?
...for dinner I made Nanny's sweet potatoes...
...and I rehydrated some ham TVP...
..to make Tofu Cordon Bleu...I made a slit in some baked tofu slices...
...and then stuffed the pocket with Daiya...
...and the ham tvp...
...and put it back in the oven to bake until the cheeze melted and it was heated through...
...it was delicious...other sides were peas, macaroni, and corn...
...so delicious...and easy...I'll definitely make it again...
...and German Chocolate cake for dessert...

I would have never thought about "stuffing" tofu! Nothing special - I did have just ginger snaps for lunch while motoring down the intercoastal. I was just lazy and didn't want to fix anything so grabbed a bag. Before I knew it, I'd eaten my fill and didn't want anything else. Not exactly a balanced diet but fun sometimes to eat like that! ReplyDeleteI love all of your food today. I do like my biscuits and buns a bit crispy and crunchy. I love pears and walnuts in a salad and the German cake looks very yummy.
