...last night's dinner was vegan-ization of the Big Mac...
...now...the Big Mac was never my favorite non-vegan food...but I do remember the very first time I ever had one...I'd gone to Waynesville with my only knitting friend from Jr. High...we used to sit together on the bus ride and share patterns...and she used to actually bring her knitting and crocheting with her on the bus...I never did that...but at 14 (I was 13)...she was already an accomplished knitter and crocheter...I was fascinated...when we were in high school band together a few years later...she used to keep her knitting on her lap and knit a few stitches during rests...that's some multi-tasking dedication for sure...
...anywhoo back to the first Big Mac...I'd gone with Cyndi and her Mom to "The Yarn Barn" in Waynesville...back when Main Streets used to actually have things like yarn shops...and on the way home we stopped at McDonalds...and her Mom ordered 3 Big Macs...I don't think she even asked us what we wanted...that's the way it was back in the 70's...parents knew best...
...so here's the vegan version...I sliced a veggie burger in half...and lightly browned it in a tiny bit of oil...so that's the "two non-beef patties"...
..."special sauce"...is some homemade vegan mayo mixed with sweet pickle relish and a little bit of ketchup..."lettuce, cheese"...cheese is Daiya cheddar...pickles, onions, on a sesame seed bun...the pickles are my homemade dills sliced...the onions are rehydrated ones...like McDonald's uses...and the sesame buns are just store bought ones...with an extra bottom bun for the middle because a Big Mac has three tiers...
...then I assembled everything...
...a Vegan Big Mac masterpiece...it's so pretty...
...served with fries...of course...and tea...also of course...probably should have had a 'coke'...
...oh my goodness...this was so GOOD!...
...and the movie that went with it was "Murder on the Orient Express"...the Kenneth Branagh version of Agatha Christie's Poirot classic...
...it was good...even though I knew the story already...and the camera angles were a really interesting twist...

Looks so good! I must do that! Funny; my son just told me that he had made "the perfect big mac sauce"! He mixed mayo, dijon, ketchup and a little of pickle brine.

I do love a burger - my favourite so far is made with tofu marinaded. The strange thing is it tastes better when I have cut the tofu into a burger shape!

ReplyDeleteYou have mentioned making vegan yogurt in previous posts, would you share your recipe, pretty please :).
I tried, and will attempt again today, a recipe involving 4 cups soy milk, heated, cooled and than probiotics added and mixed in well, then leave for 8 hours in a warm place. The "yougurt" was the consistency of buttermilk, perhaps it would have thickened as it chilled in the fridge, and it was so, so, so, tangy it was a bit over the top. I dumped it out.
Anyway, you seem to be a Queen of Vegan cooking, let me know your thoughts on vegan yogurt.

Delete...all I really do is just add a capsule of probiotic powder to the warmed vegan milk...I usually use soy...

Thank you, I will strain my next batch and see how it turns out. I have made more, and it turned out better, still like a thick buttermilk, but not very edible :)
