...Over the Weekend...

...I initially thought that everything I did over the weekend was food related...but there were actually a few non-food items...haha...
...I did the shopping early...and when I got home to put the groceries away...the Man had the Instant Pot going with a big pot of beans...pintos and great northerns...
...so then the Man and I could meet for lunch...that was fun...
...when we got home I stripped the bed and washed the sheets and hung them on the line...nothing sleeps better than sheets dried on the line...right?...
...I had seen a recipe for Vegan Bacon using potato skins...
...so I peeled some organic potatoes...trying to keep the strips long and continuous...
...coated them in the marinade...
...and baked them on some parchment paper...
...until they were nice and crispy...

...I ran the rest of the cooked potatoes through the ricer...because I'm going to make potato pancakes on Sunday...
...then I cubed a butternut squash...
...tossed it with some melted vegan butter...
...and just simply salt and pepper...
...and popped that into the oven (which was already hot for the vegan bacon)...along with the handful of seeds that the butternut yielded...
...the seeds were done before the squash...so I ate those out of hand...of course...
...and then the squash was done...and it was getting late enough in the afternoon to start dinner...so I left the oven on to make cornbread...
...so I got out my favorite cast iron muffin pan that Mom gave me...and greased it up good with Earth Balance...mixed up the cornbread and popped that into the hot oven...
...and then I left the kitchen for a few minutes...because I wanted to repaint the flag on the mailbox...

...because...every day I post a letter to the Airman...and I put the flag up...and then I check out the dining room window to see if the flag is down and I can check for a letter from the Airman...but it's so faded that it's hard to see at that distance...or maybe just too hard for my old eyes to see...

...anywhoo...I thought if I repainted it bright red...I'd be able to see it better......

...so I covered the mailbox with a grocery bag...and some paper...
...and using a can of red spray paint that I already had...just gave it a good coating...nice and bright now...
...when I got back the house smelled all nice and cornbread-y...and I prepped the collard greens to go with the evening meal...and the Man seasoned them up and cooked them...
...and the cornbread was ready...the Man prefers a cake of cornbread...not muffins...as the crust is not his favorite part...crazy I know...because the crust is definitely the BEST part...
...dinner was beans...and greens and cornbread...and tea...just about the perfect vegan meal if you ask me...
...and the crust...I mean...perfect...

...then Sunday...after taking all those photos on Saturday...I hardly took any on Sunday...but we had Church...of course...and then a late lunch/early supper...that included...
...potato pancakes...
...I love having leftover potatoes...just so I can make potato pancakes...
...and I did also manage to tackle my pile of mending in the afternoon...
...my favorite old pillowcase had just come undone in the wash...so that was just a simple straight seam to fix...
...and this sweater had sprung a hole under the arm...it's probably 15 years old...but I do try to take good care of my clothes...and they last a long time...
...this blue tee shirt was new...and came with a hole under the arm as well...it was a T shaped hole as the sleeve had not been stitched to the end...and then the underarm seam was not stitched either...easy to fix though...
...the Man continues to wear his old khaki trousers as "work clothes"...once they are too frayed for office wear...and he had snagged them on something and had a rather gaping hole...so I patched that from behind with a patch from another old pair of khakis in the sewing bin...and used the zig zag stitch...
...and finally...just a loose button that needed to be sewn on by hand...whew!

      ...the potato skin bacon was good...but I think my favorite is still the rice paper one...
