...a cup of Silk Strawberry yogurt topped with homemade granola was breakfast...after water...vitamins...and tea...
...lunch was this concoction made from leftovers...macaroni noodles, broccoli, cauliflower and I think there are a couple of Brussels sprouts in there too...the Man always thinks it's funny when I put two or three somethings like Brussels in a little jar in the fridge...but I eventually use them up...I just put it all in a bowl and topped it with Almond Milk and salt and pepper...it may not look like much...but it was a yummy way to use up some leftovers...
...sometime up in the afternoon...I made a sort of deconstructed salad with fruit and nuts...I love fruit with salad...do you?...
...so then for dinner I made some proper oven roasted Brussels Sprouts...just olive oil, salt and pepper...it's one of my favorite ways to eat Brussels...
...so we had that with some vegan sausage and sauerkraut (it's almost time to make a new batch), sweet potato, stewed golden potatoes, and a side of cooked fresh spinach...and tea...of course...

Nothing too interesting, but I did make some grits with sauted veggies for breakfast. I thought they were great, Duane did not. So I have leftovers for breakfast tomorrow. Love, K

ReplyDeleteRoasted Brussel sprouts are so good! One of my favourites vegetables.
So... there is never any leftovers ;-)
Yesterday we had lentil and vegetable soup, and stir fry for supper.
