...easy vegan Christmas dip...

...and I mean super easy...

...this is one of the little snacks that I made for our 'decorating party'...
...I just took the leftover almond meal from making almond milk in the vitamix...and added some lemon juice and vinegar and salt...to make cream cheese..

...I have to save my leftover almond meal...because 1 cup of almonds and 4 cups of water yields only 1/3 cup of almond meal after I strain off the milk...

...so... ...if you're making it with un-milked almonds you'd use a cup of almonds...and enough water to make a creamy cheese-like paste...

...but I take 1/3 cup of leftover almond meal and mix in 1/4 tsp. Salt, 1 tsp. apple cider vinegar and 1 tsp. lemon juice.
...then to make the dip...I chop up some green olives stuffed with pimiento...
...and it makes a pretty Christmas-coloured red and green dip...
...served with chips or crackers...it's delicious...
