...10.5...Vegan Swiss Cheese...

...I needed some Vegan Gruyère for a Julia Child recipe over at The Vegan Version...so I used most of Sauce Stache's Vegan Swiss recipe...I did not use any lactic acid because I don't have any...but I subbed the tapioca starch he calls for with Sour Starch...and it turned out pretty perfectly...
...I got a squarish container out and oiled it lightly...and I got out a few round handled implements and also oiled them...these will make the 'holes' in the Swiss cheese...
...and then I mixed up the Vegan Swiss ingredients...
...and cooked it until it was bubbly and thick...
...and poured it into the mold...I wrapped some plastic wrap around the sort of top heavy utensils so they wouldn't fall over in the fridge...
...and then chilled it until set...
...then I removed all of the utensils and popped it out of the mold...it's a nice firm sliceable vegan cheese...and it looks a lot like Swiss cheese...
...so I sliced some right away...it looks perfect...
...and tried it plain on some organic Ritz-style crackers...and it was delicious...perfectly sweet and nutty...just like I remember...
...and then to test the meltiness...I just took another slice and broiled a piece of toast with it...and that worked perfectly too...

...so...on to Julia Child's recipe for Vegan Quiche au Fromage de Gruyère now...

  3. WOW! I looove your "modus"! Putting things that will make the holes "before" the cheese is finished is brilliant! I made swiss cheese a few years ago, but i made the holes after, slice by slice. I love your method! And i'll give a try to the recipe! Thank you!
