...Pizza Night...the frugal way...
...a vegan pizza from our favorite local place is usually about $27...so we thought we'd try this grocery store version...
...the 3 pack of crusts was $4...the accidentally vegan sauce $3...and the Violife cheese was $4....so for $11 we have the makings of 3 vegan pizzas...I'm adding olives that we already had...kind of successfully pitting them with the Man's cherry pitter...
...the crusts are thin and the sauce is pretty good for jarred sauce...
...topped with vegan cheese...
...and olives...
...and baked until bubbly fragrant and crispy...
...eight slices or four each...
...it was really good...I'm sure you could make a pizza from scratch for less than $3.65 (a Daiya frozen pizza is about twice that much)...but probably not in the 5-6 minutes that this one took to put together...and we've still got the makings for 2 more...
...and the movie was The Man Who Knew Infinity...it was good...it was about a mathematical genius from Madras...so...you know... a movie about some people...

...7.4...Friday Update...
...we have so many little yellow blooms on the patio tomatoes...
...and so many little orange clusters of tomatoes...
...a days harvest from the little square foot garden...
...still getting plenty of chard...and I was surprised that it hasn't bolted like the lettuce...
...we've been getting a lot of rain...mostly in the form of thunderstorms...
...Mom's hanging basket...still gorgeous...
...the Man's rescued Pothos is really trying to take over the world...
...so we trimmed it back and started some more cuttings...
...we took the baby eggplant and drizzled them with oil...
...and crammed them into the outdoor oven...so much food in there...two large beets and several slices of tofu...might as well use every inch...right?...
...and everything baked to perfection...
...a days salad from the lettuce we're growing on the patio...the square foot garden is much too hot for lettuce...
...another day's harvest...
...and a row of beautiful tomatoes in the kitchen window...
...and then we sat outside on the second floor porch to watch another storm roll in...did you know that in Charleston they're called piazzas...

...7.3...Delicious Vegan Food we ate...
...there was so so much delicious vegan food this week...
...melons were on sale for the holiday...so we got a nice canteloupe...
...and a beautiful watermelon...
...right after I sliced it open...
...I took a big slice out on the porch and ate the whole thing...
...then when I came in...I took a scoop...and just scooped up balls of watermelon...
...and put them into a tupperware for storage...
...and then I scraped out all that I thought was edible...
...and put it into the blender with some lime juice and a sprinkle of stevia...
...and made a delicious aqua fresca to go with my Vegan Reuben...
...I just sautéed some thinly sliced tofu sprinkled with a little bit of vegan bouillon...
...toasted some rye bread...and added some violife cheddar...and some vegan mayo...
...then some mustard and ketchup...
...and some of mom's relish...
...then mixed that all together just on top of the toast...to make a kind of on-the-fly vegan russian dressing...
...added some homemade sauerkraut...
...and the sautéed tofu...
...and we had a perfectly delicious Vegan Reuben...
...then it was time to use up some more of our delicious blueberries...so I made a vegan pie crust...
...and rolled it out between to sheets of opened up chip bags...truly the absolute best thing for rolling out thin crust...it never ever sticks to it like it does to parchment paper...it's so slick on the inside... ...and I transferred it to my silicone loaf sling... ...it's the perfect size for this tarte rustique... ...added the cooked blueberry filling... ...and folded up the edges... ...and baked it in my outdoor kitchen...aka...a toaster oven on the patio table... ...and we had a delicious homegrown blueberry tart for dessert...

...7.2...W.I.P. Wednesday...
...another week's progress on the Porcelain Sweater...another stripe of colourwork completed...
...I do love this 'leaf' pattern...and lots of people had posted that they had a lot of trouble with it...it's not very symetrical...so it's hard to kind of wrap your head around what the next row is going to be...but I just pasted a post it note over the previous row...and the row above it and only focused on the row I was on...
...and what the inside looks like...now that I'm working in the round...the colourwork is so much easier...
...and I'm super happy with how the jogless joins turned out where you jump up a row on each round you can wind up with a visible jog in the pattern...
...but basically you just pick up the stitch below the current one and knit them together...and it evens things out a bit...it's still visible but just not as noticible...
