...Using up leftover Seitan Roast...Day 2...

...click here...to enter the 2013 Peace Ornament Giveaway...

...Day 2 of Seitan Roast leftovers...
...first I shredded the seitan with two forks into smallish chunks...
...then I chopped up some celery and onions with my handy dandy chopper...
...so for each sandwich you'll need about 1/3 cup of shredded seitan...a tablespoon of Vegenaise...a teaspoon of mustard (I used Dijon)...a tablespoon of sweet relish...and 2 tablespoons of chopped celery and onions...
...just mix it all up...
...and put it on a bun...

...what could be easier...or more delicious?...

...Using up leftover Seitan Roast...Day 1...

...click here...to enter the 2013 Peace Ornament Giveaway...

...I promised to show you some of the ways we used up our leftovers...
...probably the easiest way to eat your leftovers...is simply to slice some seitan and put it on a bun with some vegenaise and lettuce...

...it really is delicious that way...

...this was Sunday...
...and Scout clearing it away...
...and toward evening there was rain, sleet and fog...for some reason...we don't get a lot of fog here...and I love a foggy day...don't you?...
...then...this morning...another small snow squall...just enough for them to call off school...
...and Scout was out there to push the skiff of snow (ND phrase...pushing snow)...
...there's just something so Christmas-y about twinkling lights in the snow...

...Creamy Vegan Alfredo...

...you might think that an alfredo dinner would be difficult to pull off on a weeknight...

...but this simple recipe is not...
...this is the recipe that I've scribbled in my binder...sorry there's not much direction there...but seriously...that's all there is to it...
...you just blend it all up...and put it in a pot and cook until thick and bubbly...
...then in the meantime...make some quick and easy bread sticks to go along with your alfredo noodles...

...the recipe is from my old old Betty Crocker Cookbook...it was a wedding present...

...just mix them up and let them rise for about 15 minutes...
...then pop them in the oven for another 15 minutes...
...add a salad - and you'll have a delicious weeknight dinner on the table in about 1/2 hour...
...so creamy and so good...

...Make your own Tea-Strainer...with stuff you already have on hand...

...of course you can buy a ready-made tea strainer like this one...

...but why on earth would you...when...in about 15 minutes you can make one with things you already have...
...I started with a wire coat hanger...these were the little ones that Scout used to hang his little clothes on...so no longer needed...but you can use any stiff wire that you have lying around...
...I snipped the hook off the top...
...then stretched it out straight...or reasonably so...
...then I shaped a circle...
...and a handle...
...and snipped off the rest of the wire...and the structure was done...
...then I needed a 100% cotton filter bag...so I dug around my scrap bin...and found an old pillowcase that's seen better days...but it's definitely 100% cotton...
...so I cut out a conical shape from the folded edge...
...and stitched up the sides...
...then I folded them over again and stitched...the last thing you want is any tea leaves or grounds seeping through your seam...
...and I folded down the top and stitched around that as well...leaving an opening at the seam to slide it onto the frame...
...and then...you guessed it...I slid it onto the wire frame...
...from the top...
...a side view...
...ok...let's give it a trial run...
...just pop it in your mug...
...and pour in your tea...I prefer loose tea as tea bags always make it too strong for me...and I can't stand 'stewed tea' as Barbara Pym would say...
...then just lift it out...you'll need a saucer to set it on to avoid any drips...
...see all those tiny little tea leaves...and not a one in my mug...this works so much better than my wire mesh strainer...
...then just give it a quick rinse and hang it up to dry...the good thing about this wire frame is that you can take the filter off for a good washing too...and you can see Scout's spiffy bag dryer thingy is still in use...years later...
