On Saturday mornings we often make waffles...

1 cup Bread flour
1 T flax seed meal
1/4 cup oil
1 cup soy milk - 1 T vinegar
1 T Turbinado Sugar
2 teaspoons baking powder
1/4 teaspoon salt

Mix the dry ingredients - mix the wet ingredients and then mix together quickly - don't stir it too much - pour onto a hot waffle iron and bake until the iron stops steaming.

This recipe makes just enough for 3 people.

I mix the soymilk, vinegar, and oil together in a cup...

Pour onto preheated waffle iron - this one is really old - Mom and Daddy gave it to me for Christmas the year after I was married...

Bake just until the steam stops coming out of the sides and they'll be perfectly browned...

Served here with some of the fresh cherries we've been enjoying and the wonderful Maple Syrup my sister gave me in the pretty Maple Leaf bottle...

It is on a tray - but not destined for breakfast in bed - it's breakfast in front of the TV watching cartoons with the Man-Cub...

  1. hey that looks yummy! are those rainier cherries? i saw them in the grocery store. unfortunately, they had bing cherries on sale for $1.99/lb and i couldn't resist...and they were delicious! love, k

  2. Yep - they are - we love them - we've eaten bags full- I guess we need a tree - 'cause they're 4.69/lb.

  3. Waffles and cartoons sounds like fun. I don't remember the waffle iron, but glad you still have it. E

  4. Yep - we use it just about every Saturday - can't seem to quit saying yep - hehe...
