...it's so simple...just a few ingredients...
Chocolate Tofu Mousse Pie
1 package of silken tofu (about 12 ounces)
3 tablespoons maple syrup...I usually use Agave instead...
1 tsp. vanilla
10 oz semi-sweet chocolate chips
fruit (strawberries, kiwi, etc...) (optional)...and I've never put fruit on it...
graham cracker crust
Blend tofu, syrup, and vanilla in food processor (or blender) just until smooth. Melt chips over double boiler. Put chocolate into processor and mix with tofu until creamy. Put into a graham cracker crust. Chill until set (at least 2 hours). Top with fruit.
Delicious!!! No one will believe it contains tofu.

I might just try this. I use date syrup as a sweetener, I have it for my porridge and just use it for everything else.
