...Over the Weekend...

...I went grocery shopping...of course...
...winter light...it was sunny and cold...with highs in the 30's...
...I made homemade soymilk...
...and then turned that into vegan probiotic yogurt...
...and I drained some of it a little further to make greek yogurt...shredded some cucumber...
...and made a simple dill-y Vegan Tzatziki...
...and to go with it...I made some authentic Greek Pitas...
...it's a pretty simple and quick flatbread...
...you just make the dough...and let it rise twice...shape into little balls...
...and let those rest a bit...
...then flatten into a round...
...and roll them out...to 6 or 7 inches...
...then cook in a dry skillet...for about a minute on each side...
...they will puff a bit...but not develop a pocket...so these are pocket-less pitas...
...cook until golden brown spots form...and then flip...
...and cook until golden brown spots form on the other side as well...then place them under a towel...this reminded me so much of making lefse in North Dakota...
...and just continue rolling and cooking...
...until they're all done and you have a stack of pitas...
...server with Tzatziki...or hummus...or vegan butter...
...these are so soft...
...and delicious...and since they're really pretty easy to make...I'm sure we'll make them again...
...we finished the puzzle we started a the New Year...

...it wasn't that difficult...we just weren't that dedicated...
...I finished the super thick Sashay yarn scarf...that I started back in December...for Our Girl's Birthday...
...and then grafted it to form an infinity scarf...

...I got out my old "We Tend to Our Knitting"...instruction booklet from Nanny's and tried to get the Kitchener stitch right...but it's a little bit wonky...the scarf is knit in Shaker stitch...so it's not truly knit-purl...but it does lie nice and flat...and with all the variegation...it's not too noticible...I can see it of course...
...and they were calling for sleet and freezing rain Sunday morning...
...but it didn't hinder all that many folks...we still had a good turnout for the annual Groundhog Day Breakfast...
...vegan pancakes and sausage...

  2. I've always had great success with pitta bread, so versatile and freezes well.

    1. ...you're so right Maureen...I put the leftover pitas in a ziplock bag and put them in the freezer...and they reheat so well in the microwave...and are so perfect for wraps or gyros...Have a lovely day!
