...now that I'd say I'm fully recovered from my bout with shingles...things are pretty much back to normal...I managed to exercise for the first time in 2 solid weeks...and I'm back to cooking and eating...and standing and sitting pretty much normally...I still have the rash on my ankle...but the one on my hiney (slang for "hind end"...if you're not familiar with that southern-ism)...has dissipated...
...anywhoo...I started the morning by making a quart of lemon water...I don't drink it all first thing...but try to have it done before lunch...
...for Breakfast...I cut up some of the dried fruit my sweet sissie sent me for Christmas over some bran flake/oatmeal/flaxseed cereal...and had that with some almond milk...
...I'm calling this a snack instead of Second Breakfast...homemade yogurt with some flaxseeds, chia seeds and hemp seeds...and frozen blueberries...
...it looks pretty horrible when it's all mixed up...
...lunch was a delicious bowl with some of those snail shaped pasta shells covered in a cauliflower cheese sauce...brussels sprouts...carrots and tofu...
...many years ago...when we lived in Columbia...we once went to this super fancy restaurant...and they had grits on the menu...and you know this Southern Girl loves some grits...but when I asked the server if they were vegan...she said (sadly) no...they're made with buttermilk...so I probably had a salad instead...I don't really remember what I ate...just the disappointing part that I couldn't have the grits...
...so I made some grits using the whey leftover from making my probiotic yogurt...it's very buttermilk-y tasting...
...and served it in a wittle cast iron pan just like they did at the fancy restaurant...(we have two of these...'cause we inherited the Man's Mamaw's)...
...with a big plop of Vegan Butter on top...
...that was really delicious...
...I also had a chickpea salad and some broccoli and cauliflower...
...dessert/snack was later as I was too full to eat it after dinner...I blended the leftover orange mousse from Tuesdays with Julia with a banana...it was pretty delicious that way too...
