...W.I.A.Y. ...

...breakfast was some scrambled tofu and a piece of whole wheat toast...and tea of course...
...we had a perfectly ripe mango and the Man was threatening to use it in a smoothie...so I cut it up to share with him...
...lunch was one of my bowls...black beans, cornbread, greens, corn, salsa, nooch and sauerkraut...that was yummy and filling...
...another snack was some pistachios...they are fun and addictive...
...and it's Lent...so dinner was at the Church...it was potato bar...and they had sweet potatoes and regular ones...so you know I got a big old sweet one...and covered it in vegan chili...and had a big salad on the side...and tea..of course...

...I was pretty sure that there would not be any vegan desserts...so I had packed an apple and some pecans...but forgot to take a photo of that...

...it was fun to see the newlyweds a the dinner...

  1. I forgot to take a photo, but I had fried plantains at breakfast and lunch because I got too many....and they all got ripe at the same time. Also made lima beans for dinner from dried ones. I had forgotten how long they take to cook! I think I used several dollars worth of propane to cook them - probably won't do that again! Your food looks colorful and yummy as usual! Fun to see the newlyweds in their new context, I'm sure. Love, K

      I don't often get plantains...and I'm pretty sure I prefer them green...if I want a sweet one...I'd probably just eat a banana...that's funny about figuring the cost of the cooking...do you have a pressure cooker?...

      ...I love the yellow peas...but they only usually have the green split ones in the grocery stores here...I need to go the asian store where they always have a good selection of dals...

      (I love both, but the yellow ones are the traditional ones up here)
