...we had some of that 10 minute yellow box Cream of Wheat for breakfast...sweetened with sorghum syrup...with some tea and tofu cubes...
...I had an apple and some nuts as a snack...
...lunch was a bowl of black beans, sweet potato, broccoli, and a little bit of sauerkraut...and tea...of course...
...on the side I had some lettuce leaves that I dipped into some homemade vegan ranch...
...remember a few weeks ago...when I mentioned that we'd gotten some fonio...
...the article in the newspaper also had this recipe for fonio stuffed peppers...and I wanted to try it...
...so I cooked some eggplant and onions...
...and the fonio cooks kind of like couscous...
...and winds up looking like couscous as well...I added it to the eggplant...
...and then stuffed the roasted peppers with the mixture...a red one...and orange one...and a yellow one...
...put their caps back on...
...and baked them...
...oh my goodness...these are so good...I love fonio...
...have you tried fonio?...what did you eat yesterday?...

I made a nice curry with chopped veg and jasmine rice. (Chicken on top for Duane but I just did veggies). I make my own sauce that I call curry, but really is a mix of coconut milk, cheap curry spice, hot pepper flakes, garlic powder, soy sauce, rice vinegar, peanut butter and a little sugar. I was going to tell you that I learned in the Bahamas to use jasmine rice for everything. It always cooks nice and fluffy, never soggy.
