...well...it was the weekend...so pancakes were definitely in order for breakfast...
...and I thought I'd try the new to me Gardein sausage...
...it browned up nicely and tasted good...
...so I made a tall stack of light and fluffy vegan pancakes...
...and had some tofu scramble and Gardein sausage with them...it was a perfect start to the day...
...then I went shopping...of note this week...some Jasmine rice...which I don't usually buy...
...and these little kiwi berries...have you ever had them?...
...Mom and I had tried them when she was here last weekend...they are yummy...just like little kiwi fruits...Mom says don't eat the little stem though...
...in the almost free food department...I'd gotten this bag of overripe bananas for 89¢...
...so I peeled them and put them on parchment paper and put them in the freezer...
...and lastly...from the groceries...I prepped a big bag of collards...so happy that it's fall now and the grocery stores have these big bags of greens for 99¢...
...and the greens and stems went into the Instant Pot with some Greens Seasoning...
...moving on from the almost free food...to the totally free food...Mom had brought me a bag of okra from her/baby brother/SIL's garden...
...so I popped that into the Foreman Grill...just dust it with some cornmeal...and it takes a while to cook...probably longer than frying it...
...so while it was cooking I made a batch of vegan mayo...and then turned it into Ranch dressing with my homemade Ranch Dressing powder...
...it turns out so perfectly...and totally fat free...
...and I had that for dinner with a leftover pancake from breakfast (withouth syrup...just with Earth Balance)...it made a yummy bread...
...so that was dinner and all I have to say about Saturday...
...then Sunday...after Church...one of our sweet parishoners gave us a bag of freshly dug peanuts...so I washed them
...shelled them...
...sprinkled them with salt...and popped them in the oven...
...I got them just the tiniest bit too done...so perfect for me...but the Man didn't like them too well...that's ok though because I have another bag...and I'll be more careful with those...and that's all of the free food we got over the weekend...
...while the oven was on...I made a loaf of whole wheat bread...
...so delicious...hot from the oven with Earth Balance...
...and also...while the oven was on...I made a batch of homemade croutons...I just can't get enough of these things...
...and also...also wik...while the oven was on...I made cornbread for the coming week...
...using my cute little muffin pan that my sweet Mama gave me...
...because the crust is the best part of cornbread...
...and finally...I think I document this every year...they cut the hay in the field next to our house...and only got two bales...it's been so hot and dry here this summer and into the fall that I'm not surprised...

Too bad that they only got 2 bales....I bet the farmers are going to be scrambling to find hay this winter!! My goodness that's a lot of food prep!! I baked the bag of okra Mom gave us tossed with nutritional yeast, salt and pepper. It gives is a lovely almost cheesy flavor. We just ate it as a crunchy snack.
