...first of all ...Happy Mother's Day...
...Our Airman sent these pretty paper poppies from Japan...I love poppies...they are so pretty...
...and we also celebrated our anniversary over the weekend...
...and the Man wanted to make a sort of fancy vegan version of eggplant parmesan for a celebration dinner...
...he made his delicious marinara...
...and we layered up two nice stacks of long thin slices of fried eggplant...
...you know how it goes...layer sauce...vegan parm...vegan mozzarella...up to the top...
...it baked up nicely...and smelled wonderful...
...on the table...a little bit of better lighting...
...sides were asparagus...noodles...salad and bread...it was such a lovely dinner...
...let's see...what else did we get up to...I fixed te busted sprinkler spout to our waterring can with some epoxy...seems to be working fine...
...I think the only prep I did for the week was to bake some cubed tofu...that will be handy...
...and of course I did the weekly shopping...the molasses is for a new cookie recipe I wanted to try...
...and of course we got all the fixin's for our anniversary dinner...

The parmigiana eggplant looks soooo good!!!!! Can't wait for the eggplant season! Well... i enjoy the asparagus season that just begun! So ... ok for waiting a little bit for the aubergines!
