...7.14...Over the Weekend...

...started the weekend with a tofu scramble with peppers and onions and violife cheese...it was delicious and hearty...
...the weekly shop was up next on the agenda...we went to Lidl...which we hardly ever do as it's just not very convenient...and we thought their pricing was a bit odd...4/$1 does not mean 25¢ as we found with the rather dried out looking corn...if you only get two it's still a dollar...so I went back and got two more...
...and we had a gigantic zucchini that I wanted to use up...the seeds were still pretty small...so I'm thinking it will be ok...
...I sliced it in half and ran it through the slicer attachment in my old Emmie food processor...
...and just breaded it with a little bit of cornmeal...
...and put that on the Griddler to make a sort of scrambled squash fry-up/fritter thing...
...and then I shredded the rest of the zucchini...
... and used it to make a zucchini bread...
...then it was time to make another run of sauerkraut...
...same as always...trying to get pretty close to 3 lbs. (1.36 kg)...
...other food prep involved making a pot of rice...
...and once the fritters were done...and the Griddler was still on the porch...I also Griddler-ed some white sweet potatoes we had that were getting a few brown spots and needed to be used up...hence the oddly shaped pieces...
...and the Zucchini bread was done...
...the Man donned some gloves and treated all of the wood in the kitchen...
...and we snacked on these accidentally vegan cookies from Lidl...
...thin little hearts...they remind me of the Moravian cookies from Old Salem...not quite as crispy though...still delicious...
...and the whole bag fit in my pretty gingerbread tin...
