...What I Ate Yesterday...

Breakfast: Grits (with Earth Balance), Tangerine, Coffee with Cashew Creamer
Lunch: refried beans, rice, salsa

...and then dinner was a Lenten Supper at Church last night...and since I knew the menu was going to be vegetable soup and grilled cheese sandwiches...
...I made myself a grilled cheese sandwich using homemade French Bread and Daiya cheese before we left...
...and the parishioners who volunteered to do the meal very sweetly saved me out some soup before they put the meat in the big pot...so I had my own little crockpot of vegan soup...so, so nice...I love it when other people are so thoughtful...

...oh...and I took a slice of leftover vegan cornbread for my soup too...but they had saltine crackers on all the tables too...

Dinner: Vegetable Soup, Vegan Grilled Cheese Sandwich, Vegan Cornbread

  1. Your meals look delicious; as to what did I eat yesterday? Well, yesterday is a foreign country and the borders are now closed.

  2. how about today?
    this morning i had oatmeal with sweet potato, pecans, raisins and apple.
    for lunch i had lettuce, peas, broccoli and a bit of meat - all as a salad. i had a paleo brownie for dessert.
    for supper we had roasted broccoli and grilled chicken. i made a super yummy cake for dessert.

    so, you could have eaten my breakfast, most of my lunch, and my desserts with me. :) maybe i could have grilled some tofu or some more veggies for you at supper time.

    i also am so very grateful when people take my celiac into consideration and make e-friendly food. it is a blessing!

  3. It is so thoughtful when people take your dietary requirements into consideration. My breakfast yesterday was grapefruit (canned) and blueberries (frozen) followed by homemade bread toast and honey. Lunch, leftover butternut squash dhal, tomatoes and dhal, dinner, black bean and vegetable chilli with brown rice followed by canned fruit.
