...7.26...Over the Weekend...

...as we were lying in bed reading the Man said he wanted pancakes for breakfast...I mean...who doesn't want pancakes for Saturday morning breakfast right...haha...
...I had mine with the first fresh peaches of the season...and the Man had his with Log Cabin syrup...haha...again...
...I did the grocery shopping...I went to both grocery stores...but not to Aldi...
..nothing unusual there....
...but I did get these new-to-me little cups (labeled Vegan) for when I want a quick lunch/snack...and when I was checking out the cashier said she loved these...so it was nice to have a recommendation on the new product...
...and then I wanted to use up the last of the zucchini that we'd been gifted...so I grated some...
...to make a vegan version of our favorite zucchini bread...
...it's from this old old cookbook and I've been making it since we were first married...it's delicious...
...it's super easy to veganize...I just use Applesauce for the eggs...and I don't put any shortening in at all...and I only make half...
...you only grease the bottom of the loaf pan...
...bake until done...I won this little cake tester as a door prize at a Pampered Chef party in North Dakota...so a long time ago...and I still use it all the time...
...let it cool a bit on a wire rack...
...and then when you won't get burned...
...eat the warm 'heel'...seriously the best part...and it makes a perfect rushed Sunday morning before Church breakfast...
...when we got home from Church on Sunday...all this delicious veg was on the back porch...YAY!
...so...I'll be making zucchini bread again soon...
...in the afternoon...I prepped the collards...
...and got them into the Instant Pot...
...and set it on the back porch...you know...cooking greens is kind-of stinky...haha...
...and I ate all of the stems for dinner...
...and after dinner...while sitting around watching TV...I broke all of the green beans into a pot...
...and put those on to cook before bed...

  1. Ah.... peaches in season!!!!!!!!!!!!!! I just bought a basket and they are sooo good!
    I didn't know what was "log cabin syrup" so i googled it! Funny for me who lives in the maple syrup country!

  3. That orange Betty Crocker cookbook is very heart-warming, fuzzy-feeling inducing for me. It was a childhood staple for our kitchen. My dad's county-fair-prize-winning chocolate chip cookies come from in there.

    Enjoy all the bounty of freshness and seasonal delights! I got some Colorado peaches last week that were just spectacular.
