...breakfast was just a little bit out of the ordinary...still a bagel...haha...but with some baked tofu sprinkled with pepper and kala namak...
...morning snack was an apple and some nuts...also pretty same-y...
...then for lunch...I wanted some savory oats...so I steamed some spinach...and added some leftover marinara sauce and nooch...
...stirred that together with the oats...and topped it with some roma tomato from the store and some baked tofu...it was delicious...I know savory oats are not for everyone...but I love them...the Man definitely does NOT...oatmeal is strictly a sweet breakfast or a nighttime snack for him...
...and then with my oats...I had a vegan BLT salad...
...twice in the afternoon...I stirred some of that cauliflower cheeze sauce into some fresh salsa...
...and had that with some tortilla chips...
...this second batch was shared with the Man...hence the sliced jalapenos...haha...
...for dinner...nothing special at all...baked tofu, broccoli, and boiled potato with the skin on...and the corn is from the grocery store...they had some out of season corn 4 for $1...I ate this one...
...but then I cut the rest off the cob and put it in the freezer...I'll use it in Mexican cornbread or something...
...and then the star dish of the day...I made a super quick vegan banana pudding...just almond milk, corn starch, sugar and vanilla cooked into a pudding...and poured over sliced banana and the vegan vanilla wafers from Mom's...
...it was so easy and quick...just the right amount for two people...and it was so delicious...

This savoury oats intrigues me! I don't like the taste of sugary things, so this opens a new world of breakfasts for me! I must try! Spinach, marinara et nooch... wow! Thank you!

Well, my meals are not as varied as yours! The star of the show yesterday was a nice curry with lots of veggies. I had it again today for lunch. And since it's a big bowl, I'll probably have it for dinner again tonight just to clean out the fridge. Love, K

Huh! I don't think I've ever even heard of/considered savory oats. I've always been a brown sugar and maple kinda gal. I am, like Ephee, intrigued though...
ReplyDeleteI had leftover Curry Feast for lunch yesterday and we had hard shell tacos for dinner (and then promptly turned the taco leftovers into Enchilada Casserole which we will have for lunch today!)
