...2.12...Delicious Vegan Food we ate...

...we had this recipe bookmarked for quite a while...Secret Apple Pie Hack I Learned 20 Years Ago - Is It Really Better? - which involves a Maceration Trick that he learned on an advertising set...
...so I got out my apple peeler corer thingy to make peeling and slicing the apples quick and easy...
...and fun...
...I actually didn't use the little slicing mechanism of the peeler as it makes the apples too thin for our taste...we like a chunkier bite...
...got them all peeled and into my biggest bowl...
...added the spices and sugar...
...and maple syrup...even though I'm a little bit skeptical about that flavor in an apple pie...

...but then you leave the apple/sugar mixture to mascerate overnight...Glen actually says that you can leave it longer if you want...
...then the next day you roast the apples...
...all of this draws out the moisture so that the apples don't break down during the baking of the pie...
...just made my regular crust...
...and a top crust too...
...pinched the edges prettily...
...and baked...
...and sliced...and look at that...almost no watery apple juice in the pie plate...
...of course I had my slice with a nice cup of milky tea...
...and it really was just so perfect and delicious...
...and before I put it away...I'll show you this 20+ year old little popsicle stick trivet that our Airman made when he was about 3 years old...I often use it under my cupper...
...he 'hid' one of his Bert and Ernie Sesame Street stickers on the bottom...so sweet...it reminds me of the Man 'hiding' his Beatles decals inside his drawer...
