...what to serve your guests...during rhubarb season...the ‘Big Crumb’ Coffeecake...


...I subbed my Depression Era Cake for the cake part of the recipe...and even then I subbed applesauce for 1/2 of the oil...

...sprinkled some sugar on the rhubarb...

...brown sugar...white sugar and cinnamon...

...add some flour and melted Earth Balance to make the 'Big Crumb'...

...and you'll have three separate bowls to combine...makes you feel like Julia messing up all those bowls...

...pour the batter into the prepared pan...

...spread the rhubarb over that...

...I love rhubarb...

...crumble your 'Big Crumbs' over the rhubarb...

...pop it in the oven...

...and bake until crisp and golden...

...crispy topping...sweetly sour rhubarb...and moist and yummy cake...

...what better way to start a busy day...

‘Big Crumb’ Coffeecake with Rhubarb the Vegan Version
Adapted from The New York Times 6/6/07

Earth Balance for greasing pan

For the rhubarb filling:
1/2 pound rhubarb, trimmed
1/4 cup sugar
2 teaspoons cornstarch

For the crumbs:
1/3 cup dark brown sugar
1/3 cup granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup Earth Balance, melted
1 3/4 cups cake flour

For the cake:

I didn't use the cake part of the recipe at all...but used my egg free Depression Era Cake instead...

  1. You know, I have never eaten rhubarb before. It is a northern thing? I have lived from the west coast to the east coast , but never north of Virginia.

  6. That looks delicious! I really, really love rhubarb. I remember, as a little kid, I just broke off stalks and ate them right there in the garden. That, actually, was one of the first sins I remember. You see, it wasn't our garden.
