...the day started with a bowl of oatmeal for breakfast...the Man thinks it so odd that I prefer my oats raw and cold...he always eats his cooked...
...so this is just rolled oats drenched in almond milk and topped with apple, flax seeds, raisins, some homemade granola and chia seeds...
...later in the morning I had a snack...an orange and some pecans...
...I had bought tempeh (which I almost never do) just to make some tempeh bacon...
...so I pulled up a recipe on my phone...and got busy making it...
...baked crispy and golden...it smelled so good...I'll definitely be making this again...
...so for lunch I made these tempeh bacon 'wraps'...by taking a leaf of romaine...and topping it with some spinach...
...then I laid on a piece of tempeh bacon...
...drizzled on some homemade vegan ranch...
...folded it over...
...and munched...I just made one after the other like that...and they were delicious...
...afternoon snack...was a smoothie...I had frozen the remains of the VEGAN MOUSSE À L'ORANGE...and I wanted to use that up...so I got it out of the freezer with some peaches that I'd frozen because they weren't good enough to eat raw...
...and blended that up...
...into a fairly delicious peach-orange smoothie...
...and dinner was actually some not-boring leftovers from a lunch date with the Man at our favorite little trattoria...I had gotten a roasted pepper and eggplant sammie and only ate half...so I got that out of the fridge...and added some tofu...and fries on the side...
