...so...I was craving gingerbread...and the Man found this recipe...
...I was going to make it in my muffin pan...because muffins are just so handy for breakfast...
...but decided to go the traditional route and use Mom's old square cast iron pan...
...and it was so perfect...
...delicious with some tea for breakfast...
...morning snack was some fresh pineapple...
...lunch was vegan sloppy joes...fries and veggies...
...not really a snack...but the Man got one of those water infuser pitcher thingies...so we've been drinking a lot of fruity infused water...it's yummy...
...we had some leftover hummus as a proper snack...
...and then for dinner we made a huge mess in the kitchen cooking two entire tofu dishes...General Tso's tofu...
...and Spicy Asian Tofu with Hoisin Sauce...
...and Scout's Food Lion has started carrying these tofu-veggie potstickers...
...so we had to try those as well...
...and what's one more pan to clean anyway...
...everything was delicious...

It's so comforting...
Yesterday we had cauliflower soup... salad...butternut squash crostinis (thin slices with vegan cheese and pomgranate on top) ... and polenta with tomato sauce.

That all looks amazing. We've run out of anything fresh except a withered head of cabbage. No grocery store for the next week or so....
