...this sweet little guy came and ate up all of Callie's food...she was not amused...
...after I did the weekly shopping...this CRAZY storm blew through...
...and pelted everything with pretty much marble sized hail...
...it piled up some at the house...
...and in the yard...and road...
...the parking lot at the Church was littered with leaves and hail and small branches...
...and an eerie fog rose up over the ice-strewn lawn...
...the hail overwhelmed the gutters on the Church roof and pile up three feet at the side entrance...
...again...mostly marble sized...but some larger pieces...
...it was kind of fun crunching through ice in May...
...and happily...no real damage was done...and we didn't even lose power...
...while I was out shopping I picked up a little Southern Cooking magazine...intending to give it to The Airman's Wife...but as I flipped through it...I thought I'd like to try this Vidalia onion casserole...
...so I bought some Vidalia onions...the Man's Mom once told me that the fatter and flatter the Vidalia the sweeter it will be...so that's what I always look for...
...starting the cooking...carmelized onions take a long time...
...partially cooked some rice and added some almond cream...
...then the onions were done...
...added some sweet paprika...
...and some parsley...
...and cut up some of my homemade mozzarella cheese...
...and sprinkled that over the top...
...baked until golden...
...this smells so good...
...it really is a perfect side dish...
...savoury and a little bit sweet...
...I'm still going to give the cookbook to The Airman's Wife...
...then on Sunday after Church...we went out to celebarte Cinco de Mayo...sort of...it was to celebrate a lot of things really...and to spend some time with The Airman's Wife too...we had a lot of fun chatting and catching up and looking at ultrasound photos...
~Wishing you a lovely start to your week!

Wow that hail is pretty big and there sure is a lot of it. Good thing there was no damage.
