...10.8...What I Ate in a Day...as a Vegan...

...there was certainly nothing spectacular about this day of vegan eats...

...but that's the way it is sometimes (most times)...
...for breakfast...I had some of that vegan peach/mango yogurt that I made over the weekend...just over a bowl of cereal...and flax seeds...for some healthy Omega's...
...for lunch I got some black beans out of the freezer...2 muffin cups worth...and had that with some leftover rice...
...and I grilled some Brussels on the Foreman Grill to go with that...and I had tea too...of course...
...dinner was one of my colourful bowls of vegan goodness...sweet potato (Foreman Grilled...of course)...baked tofu...edamame...a smashed and grilled Yukon potato - tyring to get all of my Potassium from food not supplements...and Foreman Grilled broccoli...

...Mom mentioned the other day when we were chatting long distance...that I could probably benefit from another Foreman Grill...haha...she's right...of course...I'll be on the lookout for another $5 Foreman Grill the next time I venture to the Goodwill store...
...and finally for dessert I had a cup of that delicous tofu chocolate pudding...it's a pretty healthy dessert...just tofu, cocoa and sugar...and a mug of Nettle Tea with that...

  1. My meals would not look as good as yours! Bran cereal/banana for breakfast, a cheese/veggie sandwich for lunch and a big bowl of stir-fry over jasmine rice for supper. And some mint Oreo's and wine later. Love, K
