...2.8...Over the Weekend...

...we had a little bit of wintry weather...
...most of it had melted by the time I took the photo in the morning...
...I did the weekly InstaCart shop...
...nothing very unusual...they had overripe bananas...so I think I'm going to make banana pudding...and this is the first time in months that I've actually gotten the lettuce that I like...because I finally found an option to put in a 'note' to my shopper...and I just described this organic lettuce because for some reason it's not available on the website if you search for organic romaine...weird I know...but I'm happy to be able to get it again...
...not a lot else going on...I made a big Instant Pot full of pinto beans...most of them I'll freeze...
...and I made a delicious cauliflower based cheese sauce for dipping...

      ...I definitely...and this year especially...I'd really look forward to the novelty of snow...and I wouldn't have to venture out in it for any reason other than a peaceful walk...

  3. I'd love to know more about your cauliflower cheese. I make one that is potatoes-and-carrots, but I could always use a new veggie cheese sauce in my life. I am nearly certain. :)

    Having beans in the freezer is so handy! We do that a lot. We used to with the old-fashioned pressure cooker, but it is all the easier now with the InstantPot. I really enjoy that gadget. I wish I'd waited another year to get one since I'd sure like one with the air fryer function, but...that's okay.

    After a December and January almost completely devoid of snow and wintery weather we have gotten it in full force this month. More than a foot of snow so far in the past week and the highs are in the negatives!!! I am happy though. I love the winter landscape and the contrast this season brings to the lush rebirth of spring here.

      ...I've made the carrot and potato one too...but once I used cauliflower for an alfredo sauce...I've been experimenting with using it for all kinds of creamy sauces......I pretty much just threw some things in the blender...with some cooked frozen cauliflower...cumin, chili powder, nooch, white pepper, a little bit of mustard, a spoonful of vinegar and miso...but I'll make it again soon...and make a proper recipe...
