...2.9...Over the Weekend...

...for breakfast Saturday morning the Man and I diverged and didn't share the same meal...he wanted an omelette...and I wanted biscuits...so we just each did our own thing...I specifically wanted a 'cheeze' biscuit...but I didn't have any cheddar shreds so I just used my handy little Alaskan Ulu to make some...
...and then I mixed up a quick vegan biscuit and just shaped them with my hands and popped them into the air fryer...
...one plain and one with vegan cheeze...
...and they were done in about 10 minutes...start to finish...
...I had the cheeze biscuit first...of course...with some tea and it was delicious...
...and then I wasn't hungry enough to eat the plain one right then...
...but I had it as a mid-morning snack a little bit later slathered with apple butter...also delicious
...and then of course we did the weekly shopping...
...a pretty big haul this time...avocados and mangos were on sale for 69¢...so we got two of each...and extra tofu to make dips for game day...
...Aldi's potatoes were HUGE this time...
...I got a new drink to try...both brand and flavor were new to me...Popwell Tropical Mango...and they had the Pumpkin Spice Cheerios marked down to $1.50...which is a steal...they were about $7 a box...so I got 4 boxes...
...and then Sunday morning I made a zucchini bread...I still have enough zucchini in the freezer from last summer for one more loaf...
...that made a perfect Sunday morning breakfast...
...and then it was time to start prepping our game day dinner...we're not football fans by any stretch of the imagination...and we really only watch the Superbowl for the commercials and half time show...so I par-baked some tofu...
...and blended up two containers of tofu into sour cream to make the last packet of french onion dip...
... and some vegan ranch...the Man promised to make a not-too-hot vegan hot wing sauce for the tofu for me...and then he can just hotten (word??) it up for himself after I've used it...haha...
...my tofu wingz marinating alongside some crisp celery...I'll pop it into the air fryer in just a bit...
...after the crispy fries are done...all nice and uniformly cut with Grandma's Veg-O-Matic...
...got my new Popwell out of the fridge...
...and we were ready to eat our game day dinner in front of the TV...

...2.7...Dinner and a Movie...

...for dinner the Man made us a delicious lentil stew and served it over mashed potatoes with a side of broccoli...

...and the movie was of course the Olympics...the Opening Ceremony was last night...which was odd because we've already been watching the games...

...2.6...Friday Update...

...I thought y'all might like to know how the unprotected winter garden fared during last weeks extremely cold weather (I know it's not extreme by North Dakota/Alaska standards)...well...I pulled up all of damaged lettuce...after I'd plucked off all of the wilted leaves...
...about five of these larger buttercrunch lettuce plants survived...so I left them for future harvests...
...and oddly the entire bed of baby lettuce beide the larger ones survived with no adverse effects at all...wouldn't you have thought it would have been the other way around...
...the Napa cabbage also suffered quite a bit of damage...so I pulled off those frostbitten leaves and just composted them as they don't look redeemable at all...I'm also leaving the two worst damaged plants in the center...just to see if they will survive...
...then I picked enough crisp lettuce leaves for a salad...
...and thoroughly washed the wilted ones...because...
...well...remembering that I had made cooked lettuce in the Julia Child Project...I cooked them like greens on the Griddler...the Man said he didn't want to try it (haha)...but I mixed some soy sauce and chili sauce and made a kind of Asian sauce and it was actually pretty good over the somewhat bitter lettuce greens...

...2.5...Delicious Vegan Food we ate...

...the Man said he'd love a blueberry cobbler...so I made a crust...and rolled it out into a rectangle...
...popped it onto the filling...
...cut a few slits...
...and baked...so now we've got a huge blueberry cobbler to last through the week...

...2.4...W.I.P. Wednesday...

...Our Airman's Wife absolutely loved her birthday present...here's a photo of it in it's new home...it looks adorable on their sofa...
...I needed a new set of workout gear for the gym...and this is my favorite pair of workout bottoms...they're kind of capri length leggings...
...so of course I went thrifting to get some 'like' them...and you say...wait...that's a sweatshirt - not leggings...I know - so that was a fail...but I'm going to turn that XXL sweatshirt into a pair of leggings...
...and I got it because it matched this stained burgundy PINK top that was in the free bin...
...so I made a tissue paper pattern of the leggings...
...and cut the sweatshirt apart...you can see that the shirt is not quite as long as the pattern...but that's ok because instead of the flared leg...I'm going to add the ribbed cuff from the sweatshirt right below the knee...
...sewing the pieces together...and I'm sewing everything together with white thread and a top-stitch overlock...so that it matches the top...
...I had to do some piecework on the sides...and I tried to make it 'sporty' looking...but I liked that I was able to position the logo right at the hip - where a logo should be...haha...
...this is all the burgundy that I had leftover...
...the finished leggings...there's a yoke with a ribbed cuff at the waist and the ribbing under the knees...I'm really happy with how they turned out... they'll also be the perfect 'pedal pushers' for riding my bike...
...so then I turned my attention to the shirt...and pretreated the spots with homemade carpet cleaner...
...they weren't horrible spots...probably a splash of coffee...
...and so that came out clean...

...2.2...Over the (snowy) Weekend...

...we got an early start on a weekend that was supposed to be a major snow event...
...so we had vegan waffles...
...then we made a quick grocery run...
...pretty much normal stuff...we've been having a lot of trouble finding organic soy milk for some reason...so we were thankful that aldi had some...
...we cooked an Instant pot full of yellow eyes...
...and got those stored in Tupperware...some for the week ahead and some for the freezer...we're not really worried too much about losing power this weekend because it's so cold that it's supposed to be a light powdery snow not a heavy wet one with ice...
...and sure enough...just about 4:00...it started to snow...
...and it's been so cold that it started to pile up quickly...
...so of course we bundled up and went for a little neighborhood walk...
...it's sticking on the sidewalks...
...but not yet on the roads...
...but it's sifting down through the trees and carpeting the woods...those are the big boulders that the little ones climbed on when they were visiting last spring...
...snow on the palm trees...
...and the river rocks around the lamp posts...
...and then back home...snow is so unusual here...they said on the news that the local photographers were inundated with calls for family and engagement photos in the snow...and the neighborhood children were certainly enjoying it...
