...What I Ate in a Day...as a Vegan...

...still a day behind...
...after water and vitamins...I had a banana and the last of the brown (thirded) bread for breakfast...I thought about adding peanut butter but in the end I did not...
...remember the purple sweet potatoes...they are gorgeous...
...sliced and grilled on the Foreman grill...
...with chili, broccoli sauerkraut and regular potato...they were just OK...they really did not blow my hair back...so I won't be spending twice as much on them again as I prefer the regular orange sweet potatoes...now the Asian ones that are reddish-purple on the outside and white on the inside are worth it...but I rarely see those here...
...afternoon...I had a gifted pear...
...it was sweet and juicy and delicious...

...I also ate a handful of fritos in the afternoon...but didn't take a photo...just vegan junk food though...
...and for dinner...we dodged some thunderstorms and cooked seitan on the grill...and had that with vegan coleslaw, tomato, and baked beans...

    Yesterday we had zucchini lasagna (zucchini as pastas).

  2. A bagel for breakfast and a bit of leftover fried tofu curry for dinner. I didn't eat much because I got the shingles vaccine the day before....and I was in bed most of the day with a slight fever and general ache. I'm feeling much better today so hopefully my experience is not as bad as yours. Love, K

  3. I have never tried seitan. I eat a lot of tofu, mainly just scrambled, which I really enjoy. Perhaps I will give seitan a try.
