...What I Ate in a Day...Traveling...

...I had made these 'granola' packets before we left...

...in each packet

1/2 a Brazil Nut (100% of daily selenium)
1/4 cup oats
1 T Chia seeds
1 T Flax seeds
2 T Hemp seeds
1 T Cacoa nibs
2 T chopped dates
...I almost always take a cooler with me when I travel by car...so for breakfast most days I just had coffee and one of these packets with some vegan milk from my cooler...
...and I was so excited about trying this vegan restaurant...
...we had to wait a bit...but that was fine...everyone was cheerful and upbeat...
...I tried the vegan reuben...with a side of chickpea salad...all of their sauces are vegan...and the salad was like a potato salad only with chickpeas...
...I got the grilled tofu in mine...and it was delicious...
...and Scout got the veggie burger as a patty melt...with a side of hummus and chips...
...he said it was really good...
...and then of course we had to try the vegan desserts...the server recommended the vanilla cupcake...
...it was good...moist and creamy...we both thought it had too much frosting though...
...and then we got the peach pie...
....a cute little single serving...
...and also very very good...
...this gorgeous dish was really the only 'fail' of the entire trip...we got it at a swanky little wine bar...and it's supposed to be a sort of deconstructed sushi bowl with marinated tofu...but I swear they just took a block of tofu and crumbled it into the bowl as it had absolutely no flavor at all...
...and then in Knoxville we waited a long time for a table at 'Not Watsons'...for just some regular pub food...my black bean veggie wrap was quite good...

...we ate a lot of good vegan food on our trip...it was easy...

  1. all that food looked really yummy. i love a sandwich made with that swirled pumpernickel and rye (i assume that's what it was).

  2. Thw Wild Cow seems a nice place. The 2 meals look delicious! Specially the burger. And the bread they use in the sandwich must have been really good!
