...1.7...W.I.P. Wednesday...

...this week's W.I.P. Wednesday is all about using up some of the food we've been given...
...a South Carolina friend gave me a couple of limequats while we were in Columbia last week...
...they're like tiny little lemons...and I really enjoyed them in some water...and I said so...
...so...the next day...what do you think happened...he brought us a whole bag of South Carolina citrus...

...now...I didn't even know that you could grow lemons and such in South Carolina as it does still freeze there in the wintertime...but apparently there are varieties that will grow there...maybe you have to cover them if it's going to be really cold...

...anywhoo...there are more limequats in the bag...along with some Meyer lemons which I have actually heard of but never eaten...and those two huge lemons are called Ponderosa Lemons...and my friend advised me that they are best for zesting and juicing...which I thought was kinda funny as I don't usually use lemons for anything else anyway...
...the limequats are a perfect size for squeezing into a first thing in the morning glass of water...
...I spread out some cling film and started zesting those huge Ponderosa Lemons...
...they're so big that they are a little bit unwieldy...
...but I got a good sized pile of zest from them...wrapped it up and put it into the freezer...
...then instead of zesting the Meyer lemons...I peeled them...that way I'll have a couple of varieties of lemon zests for recipes...and the Meyer Lemons are supposed to be sweeter and less tart...
...then I juiced the Merer Lemons using Nanny's old juicer...it was a little bit difficult with their thinner peeled skins...but I managed...I froze some and kept some in a jar in the fridge...I'm going to make some lemonade...you know...because LIFE gave me some lemons...haha...
...then I sliced open the Ponderosas...and man are they huge...
...and just sort of smooshed and mashed them around on the juicer they were too big for...
and they really have a LOT of seeds...
...I froze a pint in 1 Tbls cubes for adding to recipes...and I have a little over another pint still fresh in the fridge that I'll just add to water in the mornings or use it to make some lemonade...
...then I thought I'd make a batch of granola with that spare carton of oats that Mom gave us...
...it's the same microwave granola that I've made before...
...and we're still eating up those apples that one of our parishoners gave us on Christmas Eve...so I thought I'd make a really quick and easy apple crumble for us to have after dinner...

...I cut up one apple each into a ramekin...sprinkled it with cinnamon and brown sugar and dotted it with Earth Balance...
...microwaved it for a couple of minutes...
...then topped it with some of the granola...
...dotted that also with a little Earth Balance...
...and popped it into the oven...
...and we had a quick and easy and delicious dessert...

  1. Wow, those Ponderosa lemons are huge! Neat. Love the little quip about life giving you lemons. I knew that was coming as I was reading! Love, K
