...7.23...What I Ate in a Day...as a Vegan...

...I started the morning with a peanut butter and banana smoothie...so yum!
...a little bit later in the morning...I made some toast...and slathered on some Nutiva...my sweet sissie had sent a jar of this goodness back at Christmastime...and we love it...so it's a staple now...
...for lunch...I "fried" some okra on the Foreman Grill...
...and had some mixed veg, garbanzo beans, spinach and rice with that...
...then for dinner...I got this roasted eggplant out of the freezer...
...dusted it with flour and seasonings and "fried" that in the Foreman Grill as well...
...meanwhile...the Man made a delicious fresh marinara sauce using up all of the fresh bell pepper in the house...
...layered...sauce...eggplant...sauce...eggplant...
...sprinkled vegan parm on each layer...
...ended with sauce...
...and vegan parm on the top...baked until hot and bubbly...
...served with noodles and a salad...it was so good...

...what did you eat yesterday?

  1. Nothing as colorful as yours!!! Bran cereal for breakfast with a banana, sandwich for lunch and a couple of hot dogs for dinner. And some crackers for a snack. And some wine.
