...breakfast was just my regular bowl of mixed up cereal and fruit with boughten almond milk...
...then for lunch...we had a grapefruit in the fruit bowl that was starting to get a little bit shriveled...so I wanted to just use it up...and I sliced it like the Man does his...and sprinkled it with this stevia instead of sugar...
...and I had a bowl of potato soup (frozen in muffin cups in the freezer) with some crumbled up cornbread...also from the the freezer...it was a good (if weird) lunch...haha...
...while I was getting those things out of the freezer...I came across this...it's from our beach trip with the kiddos back in November...so I thawed that out and made a quick little bowl of angel hair pasta just to use it up...and it made a really good afternoon snack...
...and then dinner is nothing out of the ordinary either...I marinated and then baked the tofu in some of the broth mix I had left over from the last trip up to mom's and I had some vegan stuffing in the freezer and some of that orange cranberry relish...and I made us some potatoes, green beans and rolls to go with it...it had a very Thanksgiving sort of taste about it...even on a tray in front of the TV...which is honestly where we are still eating most of our meals...I think we need to get back to the table more...haha...
...later in the evening I wanted something sweet...so I made a cookie in a cup...
...and microwaved it...
...it was delicious...and unfortunately...I burned my tongue on it...oh well...
...what did you eat yesterday?...

Good job on the freezer cleaning eating!! I had a normal sort of day, bread and marmalade for breakfast, a sandwich for lunch and lobster/baked potato/green peas for supper. Then some ginger snaps for something sweet, then some corn chips later as we watched a TV show. (We're watching OZ now - an HBO prison drama series from the late 1990's). You would NOT like it....) Love, K
ReplyDeleteHey K,
Delete...yeah...that show doesn't sound good to me...but we just started Steve Carrell's Space Force...on Netflix...pretty funny...and ginger snaps sound really good to me...

Cookie in a cup, you say....Mmmmmmmmmm! We do a microwave brownie that looks similar--a recipe from Matt's childhood.
ReplyDeleteHi Beth,
Delete...I also have a lava cake recipe that I usually make in a rice bowl...it's from Julie Hasson...you'll have to post your brownie recipe...
