...on today's installment of Friday Favorites...I'm remaking a favorite cookie from my youth...
...Mom's No-Bake Cookies were pretty easily veganized...just using traditional vegan ingredients for the milk and butter...
...to start with...instead of melting margarine...I blended some medjool dates with a little bit of water to make a date puree...
...and then instead of all peanut butter...I added some peanut butter and some PB2...
...and mixed that well...
...and then cocoa...no sub there...
...a spoonful of vanilla...and then stirred in the oats...
...and we were done...
...just drop spoonfuls onto a parchment lined cookie sheet...
...and they will become a bit more solid in an hour or so...
...and they are pretty delicious with a nice cold glass of almond milk...
HEALTHIER VEGAN NO BAKE COOKIES
1 cup Date Puree (about 7 Medjool dates and 1/2 cup of water)
2 Tbls. Peanut Butter
4 Tbls. PB2
1/2 cup cocoa
2 cups Oatmeal (or a little bit more...until you get the right consistency)
1 tsp. Vanilla
...stir everything together until combined...and drop by teaspoonful onto lined baking sheet...
...and this is a copy of Mom's Original recipe...

These look tasty. I haven't made no bake cookies for a long time but I don't think the recipe I used calls for peanut butter. I've never seen peanut butter powder before. I'll have to keep my eyes open next time I'm at the health food store.
