...Tuesdays with Julia...

...well...I did cook with Julia...but I didn't do a new post over at The Vegan Version...because I've made her caramel before...so you can go here to see the original Vegan Caramel post...

...I'm still astounded at how simple it is to make...both in process and ingredients...it totally transforms sugar and water...
...seriously...you put some sugar and water in a pot...2 to 1 ratio...
...and you start boiling it...covered...
...and Julia says you can lift the lid and 'peek' to check the colour...
...it just takes a few minutes...
...and you have to be careful to take it off the heat BEFORE it reaches the colour you want....
...because it continues to darken just from the residual heat of the pot...
...so when it had reached the right colour...I made my Vegan Buttercream Icing...and stirred that in...and then I added some chopped pecans and coconut...
...because I wanted to use this caramel to ice a chocolate cake...like German Chocolate Cake just made with dark chocolate...
...it was so delicious...
